    Default Sue's Ecopolitan thick 'n spicy veggie soup

    I highly HIGHLY recommend a stop at Ecopolitan in Minneapolis if you can get there. They freely share their ingredients in recipes. When I was there I loved the spicy veggie soup...using their ingredients, here's the recipe I came up with. This is wonderful!

    Start with a base of 4 cups of homemade mixed veggie juice. Be sure to use some beet and beet green (plus tomato, green pepper, greens, celery, carrot, bit of onion). Pour juice into vitamix, add one avocado and a big handful of spinach and mix (this makes it very thick). The green avocado mixed with the red juice from the beet makes a beautiful brown color like beef stew). Now, add spices. I used parsley, lots of cumin, curry and red pepper and sea salt. Dice up some butternut squash, zucchini, carrot and put about 1 cup of diced veggies in a bowl, pour the soup over the veggies--very much like stew. Try warming this on the stove to 100 degrees.

    I am going to try this - sounds like something I can offer hubby as he wants to be raw. You haven't told us about the coconut cake yet - we are all waiting for the words on the taste, texture, smell and was it worth the price?

    hey, when were you in my neck of the woods? Thanx for the recipe. They don't always share their recipes. Been trying to get them to give me the falafel and lasagna recipe for a LONG time!

    I came to the site to find this recipe I posted 3 years ago...it was yummy! I have a big butternut squash on the counter and wanted to make this soup. Enjoy!
