Ditto for me....I'm making these, only with berry jam....I don't have any apricots! Can you make "jam" with fresh fruit? The reason I ask is, my grandmother used to make pear preserves that everyone loved. We used to go over just to have them with her homemade bisquits. I have fallen in love with fresh, bosc pears, could I make them into jam (maybe with just honey). Then again, what would I smear them on? I would be happy with some muffins from the dehydrator. I'm off to search, unless someone wants to post a favorite recipe, and if you've tried something from Alissa's book that works well...I'd be happy to hear it.

Hi and thanks for the recipie.
I made these and they ARE so good. Just the jam in and of itself is so delicious that I had to quadruple the reipie because I kept eating it... one teaspoon on the cookie, one and a half for me......... then one T. for me and one t. for the cookies, ect. ect. ect.
I did have some concerns about the measuring of the soaked nuts. Half cup of almonds didn't reach the 3 cup mark after soaking??? If I wouldn't have tripled the recipie, I would have been short two cups, approx.
The halzelnuts exceeded that amount. So, I am wondering if the composition of the water has anything to do with how much the nuts expand when soaked? Or maybe how long to soak is what matters. I soaked mine 24 hours, ample time, I thought.
Where did I go wrong?
Anyway, the batch made one dehydrator trays' worth, plus one huge cookie with the leftovers.
These are so good, however, I think I should warn you about one huge problem: Don't use raspberries unless they are seedless, please? I used a rasperry/blueberry/blackberry combination and it was delicious except for those hard little seeds from the raspberries. Kinda a dissappoinment.

How would one go about making a nutless big breakfast cookie? Sprouted buckwheat instead of nuts?

That looks just like an english muffin with apricot jam! It also looks incredibly delicious. I just made little ones like this yesterday with strawberries instead of apricots and they are so good.

When you use dates for this do you soak them and also how do you measure them by packing them down in the measuring cup or just setting them in the measuring cup the way they are?
If I can't find organic flax meal at my local health food store can I take organic flax seeds and make flax meal somehow?
Last question... approximately how long do you think you usually dehydrate your cookies and what temp do you use?

Yes, you can put flax seeds in a coffee grinder and it makes flax meal. I do it all the time.

I am wondering if it has to do with the nuts. I have soaked almonds and sometimes they really swell up, and other times not so much.
You can always blend the raspberries, and push the pulp through a strainer to strain out the seeds. I do that sometimes when I want a smooth sauce.

So when you all measure your dates how do you measure them? I've heard of some people packing them down into the measuring cup to get their measurement, is that what everyone else is doing too? Thanks, I'm new to this whole dehydrating thing.

So good! Thank You! I loosely pack the whole dates in the measuring cup, I don't want things too sweet. These taste like an italian pastry that way.
