    Default BIG breakfast cookie!

I made this for my husband who is not ready to face the day on "just juice". Its Elaina Love's thumbprint cookie that I have just made HUGE and filled with apricot jam & dehydrated - yum!

    Recipe below on post #8.

Great idea to make a big cookie and it is so pretty in presentation too! So how did you make the apricot jam? In my old days of cooked foods I made apricot freezer jam each summer but that won't work now!

    eachpeachpearplum,

What a great looking cookie. Would also love to make some of these. Apricots have always had a special place with me. Is this from her Carob-Cherry Thumbprint Cookie recipe or another title?

    Thanks!
The cookie recipe is from Elaina Love's DVD Pure Joy Living Foods, Introduction to Living Foods Vol 1. The recipe is just called Thumbprint cookies and are filled with a raspberry jam.

    www.purejoylivingfoods.com

    I always triple the recipe too;

1 c. SOAKED almonds (starting with 1/2c. unsoaked)
1 c. SOAKED hazelnuts (starting with 1/2c. unsoaked)
    1/4 flax meal
    1/2 dates
    1.5 t.citrus zest
    1.5 t. vanilla extract

I like to grind up nuts first then add everything else. Worked best in food processor vs VM.

Fruit filling; (BTW make a great all round jam - so again make loads)

1 c. berries or any fruit (I have been using frozen mixed berries) or soakes apricots etc.
    1/4 c. dates
puree till smooth - I have had best luck using food processor for entire recipe.
Put a BIG glob of jam on cookie as is shrinks. Dehydrate to desired firmness.

Dough lasts forever in fridge thats why I triple it.

Those in the picture I first rolled in coconut!

eachpearplum - when you say :
"1 cup soaked nuts (1/2 unsoaked)", do you mean to use 1 cup of soaked almonds and another 1/2 cup of unsoaked nuts?

Thanks for the recipe! It looks fantastic!

Sorry, I actually wrote it as the author did but I undwerstand it's confusing. Put HALF a cup nuts to soak and when they are done they will have increased in volume to ONE cup!

    I hope tha helps :)
