    Red face HELP - salad dressings needed

    Hi guys!

    I need some help...

    I am trying to go low fat, now normally I stick an avo in and blend it with lemon juice, celery/cuke maybe olives and some greens - it's YUM and I can live on it - BUT for health reasons I need to go low fat so I can't have an avo every day

    PLEASE tell me there are yummy dressings out there!
    BUT - I must warn you - I can't eat...
    *seeds
    *nuts
    *dried fruit

    So there's a challenge for you!

    This is my favorite! My SAD husband loves it. Below the recipe is stuff about how it can be used besides salad. I've never added the cayenne. Bonus: None of the things you can't eat are on here! I hope you enjoy as much as I do!


    Sweet and Sour Ginger Dressing
    ________________________________________
    1/2 cup apple cider vinegar
    1/2 cup olive oil
    1/4 cup shoyu
    5 tablespoons honey
    1 teaspoon garlic powder
    1 teaspoon minced fresh thyme
    1 teaspoon minced fresh ginger
    1/8 teaspoon cayenne
    Makes about 1-1/4 cup
    Place all the ingredients in a glass jar with a tight-fitting lid and shake to combine. Refrigerate.

    *** Note from Sharon, raw foodist who prepared this as a Baby Shitake Mushroom marinade at a Raw workshop I went to says: "I used fresh garlic instead of the powder, and also added a pinch of oregano and basil to her recipe. I prepared the dish on Thursday evening allowing the vegetables to marinate for about 24 hours. I recommend simply tossing the mushrooms in the marinade and layering any additional vegetables underneath the mushrooms so that any of the vinegar that might drain to the bottom of the dish would not soak into the mushrooms. I used red pepper slices, broccoli, zucchini slices, and red onion slices. I used a one gallon size glass jar, which allowed me to turn the vegetables several times throughout the day, re-coating the mushrooms without loosing the layer of vegetables underneath. I tossed everything together just prior to serving. This is a GREAT salad dressing, too!"

    Cool Kristi thanks!

    But... not low fat for me, the olive oil.... drat! Maybe it lasts a while? So it is low fat overall.... how long does it last you as one person (if hubby doesn't eat it hehe).
    I can't get shoyu raw tho... do you think it will work still? Is shoyu like miso?

    I missed the low fat part......sorry. I don't think the fat content is bad when you break it down into a serving size. Do you have Alissa's book? There are many in there. If not, I'll write them down for you.

    ahhhh you replied when I was editing hehe, brill thanks.

    I don't have Alissa's book nope, I would get it on principle but i'm not a recipe person... cept when I need dressings ;)

    It lasts an amazingly long time. It depends on how often you eat salads, how big or small and how much dressing you like. I don't know what miso is. Maybe someone else can help with that. I'll type up some that are very low or no olive oil.

    What health reasons require you to be so low fat? I'm sure you've said before on another thread but my memory is short.

    PCOS (polycycstic ovaries) and no periods - insulin resistance - i'm trying low fat as Dr Doug recomendeds it to help balance blood sugar and regain fertility, well I know someone who it worked for in the fertility dept. in PCOS anyway. Worth a go.

    Thanks again for taking the time to help me out I really appreciate it.
    I eat a biiiiig salad, but anything that makes this kale taste nice would be good hehe. I will try it, I still have olive oil left to use anyway, i'll see how long it lasts me, is the shoyu stuff salty?

    Try raspberries and oranges blended together. You can add a sweetener if you need to...

    Wow, raspberries and orange?! I've never had something fruity like that on salad before, my old conditioned taste buds are doubtful but I trust you I will give it a go, I do love orange in dressings for sure - when I 1st went raw all I had on my salad was squeezed orange and it was awesome!

    Hey guess what! I just fiddled about on fitday.com and found that I can have an avo a day OR a tbsp of oil, this makes me feel MUCH happier. It makes my goal of 80-10-10 more like 77-13-10 but thats so close i'm not worried :) Some days I will have light dressings though, to balance it out, i'm really looking forward to trying lighter ones, but it sure feels good to know I can make my avo-greens 'soup-dressing', means I get loads of greens and it's still tastey hoorah!

    My standby, not low fat though:

    A spoonful or two of tahini
    Some olive oil
    Some nama shoyu
    a little water
    some minced ginger

    I could live on this stuff! Kristi..yours looks great, I've got to try it!
