I'm making ice cream pie for Matt's birthday tomorrow!!!!! I'm so excited! I just made the ice cream bases, and they are freezing right now.
Vanilla Ice Cream Base: blended soaked cashews, soaked dates, vanilla, salt, water, and a little bit of ground flax into a thick cream.
Chocolate Ice Cream Base: blended soaked cashews, soaked dates, little vanilla, salt, CAROB, cacao nibs, water into thicker cream.
Now I'm freezing them in ice cube trays. When they are frozen, I plan to run them through the champion juicer to get "soft serve" and I will layer it in a pie, then freeze!
Here's what the layers will be:
Crust (standard raw nut crust)
vanilla ice cream
raspberry sauce (raspberries and honey)
chocolate ice cream.
