    Question nut substitution

    Hi everyone,
    I've just about got all my ingredients together to start week one in Alissa's book but no one in my area has any macadamia nuts for the fettuccini alfredo recipe. What nut can I substitute for the macadamias? Also, I can't find fresh basil anywhere,Would it be alright to substitute dried and if so how much dried equals 1 cup of fresh basil?

    Hi Kirk,
    You can just increase the cashews or use more cashews and more pine nuts to equal the amount given.
    What is the basil for? You probably can but it depends on the recipes.

    Hi Alissa,
    Thanks for the nut info. The Basil was for Week#1 Creamy Italian Dressing I think. I thought maybe I could substitute dried basil for fresh but didn't know how to convert it.

    BTW if you ever write a recipe book for blended meals (aimed at people who have no teeth) I could sure use it. Thanks......Kirk

    Hi Kirk,
    Sure thing! You can definitely use dried basil in that recipe. I would use about half to start.
