Congratulations to all of you guys sticking with your healthy eating habits! I did a 3 day juice fast a week ago and am reading through these posts gathering inspiration to commit to 100% raw next week. (This weekend I am out of town and away from my juicers and blender and dehydrator so I figured I'd start Monday.)
Anyway, I'm looking forward to joining all of you. Thanks for the inspiration, and btw the tacos look amazing!!! Cheers.

I 'm new, this is the end of my first week mostly raw- I drink black coffee in the morning, and use Brianna's salad dressing on my veggies. I want to make my own dressing but haven't gotten Alissa's books in the mail yet, so I am not so motivated to make them.. but I will! I am unlikely to give up my morning coffee because it is a huge victory for me to even just drink it black-- I used to have a little coffee with my artificial creamer and sugar, (but just one cup in the am.)
I am the mom of a huge family, I'm 48- perimenopausal and have just been totally wrung out from a lot of stuff, but mostly from low carb yo yo dieting and round after round of appetite suppressants- that, after about the same 30 lbs I've gained and lost three times now, just don't work anymore. Marry that with the side effects of midlife everything and pangenerational parenting (my oldest is 26, my youngest is 3) and I was pretty disheartened- and my skin is a wreck on my face. So, here at the end of my first week, I feel a whole lot better already.
I have not stepped on my scale, I want to just regain some quality of life first. Then maybe my face will clear up or heal, and then.... then I will be freaked out about my weight if necessary.

Welcome TackleBox and Jcbf19!!!! So nice to have you both here!!!

@ jcbf19: one of my favorite dressings is just lime/lemon juice, Olive Oil (EVOO), green onion, sea salt, pepper. You can even add some red wine vinegar and cilantro, if you have it. Try experimenting with it! Even just the basic squeeze if lemon, lime, or OJ over a salad is great in a pinch. Check the back of your favorite dressing and try to recreate a raw version! Have some fun and get creative!

    Hi all!

I had a death in my family, so I was gone from the site for a few days. I juiced all but 1 day, so I'm still doing great with that. I wish April would hurry up and get here! I'm SO ready to start my 111 days!

Today I'm having more Cantelope juice, but I'm gonna add some lime to it...(gotta check out Aleesha's post to see what a good combo for that would be...). I'm also having a marinated Mushroom for Lunch with Whipped Parsnips (RFFE), and Raw Nachos for dinner. I'll post some photos a little later when I eat. I'm just waking up and haven't had anything yet.

How is everyone else doing today? :)

@Renee: I hope you and your family are holding up as well as can be expected. Here's a hug for you from Austin.

@jcbf19: I make a ranch dressing using the recipe from therawtarian.com:

    1 ¼ cup cashews
¾ cup water (or a little more)
    3 tablespoons lemon juice
1/3 cup apple cider vinegar (OR LESS!!! START WITH HALF THE AMOUNT)
1/3 cup extra virgin olive oil
3 tablespoons agave nectar (or honey) (or maple syrup)
    2 cloves garlic
    3 teaspoons onion powder
    1 teaspoon dill
    1 teaspoon sea salt

Since I was a dipper (everything went in ranch) finding a recipe for it was a huge key to healthy living.
    It's time to live.
    With love, Kit

    Red face

    Renee those nachos look amazing!

Our juicer arrived today .... First juice ended up being carrots, celery and an orange... I was planning on making a V8 but I needed my tomatoes for tomorrow.

    I'm currently dehydrating pizza crust!!

Tonight's dinner is left over Sloppy Joes... I love my walnuts and just really have been having a fun time substituting walnuts for beef. My friend Heather has been shocked by the fact I can sate her "meat" cravings with fresh fruits and veggies. I thought she'd shank me for my jalapeño almond cheese...

I'm looking forward to putting my mariners sauce, tomatoes and almond cheese on some pizza crusts tomorrow for my lunch!
    It's time to live.
    With love, Kit

I promise I have pictures coming. Right now my finished raw pizzas are warming in the dehydrated. The young lady I bought my raw cheese from at the farmers market said that it may even "melt" slightly if warmed in a dehydrated. I am a but excited! I"m having raw pizza and a blend of carrot juice for breakfast and am taking a bottle of juice to work that will stay sealed until lunch and repeating this amazing meal. Today is a beautiful day!

    Today's lunch... WIN!!!!!

The juice was placed on the shower ledge ... My hubby is weird sometimes but it was a great breakfasts/lunch treat.

My hubby asked me how I would warm up my pizza at work.

I made a face. Then said "we live in Texas. I'll put it in the car a half an hour before lunch. The car gets to about 101 and will be perfect.

    He rolled his eyes.

I mixed it together and will let it sit for a while to let the Zucchini marinate.
