    That would be awesome - I like mushrooms as a base. The only ones I have that don't have flax have one or another variety of nut...

    @ Cai - sounds like things are moving along. Must be exciting to see the sign!! Make sure your flax seeds haven't turned - I've noticed bitterness when seeds/nuts start to turn. I have no idea on the coconut other than that maybe the dehydrator was running warmer than usual (?). I've never had that happen, but then again I usually buy pre-dehydrated coconut (it's hard to come by fresh where I live) so I've only ever done it myself a couple of times.

    I think these havewalnut but in my experience you can just swap them out for sunflower seeds for example.

    Day 25
    Rennee I have discovered the wonderful taste of sage. Must do the pizza. The raw onion is not too strong??

    Mystic and Queenbee Thankyou for taking an interest. yesterday the bitterness that I was picking up seemed to disappear
    I made up 2 leafy green salads with cashew nut dressing, dried mango, cherry tomatoes and red capsicum, topped with the 2 different burgers topped with raw ketchup and mayo.

    My marketing guy loved the bugers and said they tasted like meat, that was the sage,mushroom and walnut burgers. These burgers called for portobello mushrooms but I could only find fresh straw mushrooms in the market. I have bought 3 different dried mushrooms including porcini.
    Any thoughts Mystic on the types of mushrooms to use?

    I am not sure how to tell if my flaz seed is rancid or not.

    yesterday I made strawberry cheesecake and 2 small apple pies.
    On my raw dessert menu I now have

    Choc/orange mousse tart
    key Lime Pie
    Strawberry Cheesecake

    Chocolate Ice cream
    mango ice cream
    Papaya ice cream
    Banana and coconut ice cream

    just have to get stuff prepared for the quiche and mushroom spinach tarts.
    I watch a guy on YouTube that gave a convincing argument for reducing my fats and increasing my carbohydrates in the form of fruit.

    Feeling really good. The coffee obsession is receding but still want one. My one remaining lady that started with me is fantastic. I am so proud of her.

    She is a wonderful lady been here in Vietnam for many years started an NGO helping mentally and physically disabled kids who would otherwise be left to just rot in the corner. She is also a big animal lover and has rescued dogs from the cooking pot, tied up to the point of madness.

    I often deliver her juices to her centre and am very impressed with what she has achieved
    Mystic you are from the UK so is this woman, I wanted to bring attention to her work here. I it is a great human interest story.
    What would be a good place to approach. I suppose the BBC world service could be one, maybe Panorama

    Sorry to digress from the food. I do tend to ramble

    I use portabellas for mine. The BBC might be a bit straight-laced. Channel 4 might be better but I don't watch tv so I'm not the best person to ask. Maybe BBC radio 4. It would then get picked up by the tv people.

    Raw apple cobbler sound so great. I make a raw apple crisp, which I warm in the dehydrator. Yum.

    Hello Everyone,
    Sorry to jump in at the end of the month. No not really happy to be here again.... Its nice we always get a warm welcome no matter how many times we come back.. I waited to post until I can fully commit to the 30 days. been aboutt 80% raw. Always sabotage myself with those few little bites. Ive gained some weight since last summer and hope to get it off.
    I have been making lots of smoothies. My new fave is frozen bananna and raw cacao. That was my breakfast. Lunch big salads. Dinner big salads then dates for desert.

    Favorite new recipe:
    Raw Pecans
    Figs (soaked)
    Mix in food processor, press then cut into bars.

    These are so so good I have been eating them everyday. (Dr. Ben Kim recipe)

    Queenbee, I have started using a lot of strawberries with mint in my smoothies after reading your post.

    Banana coconut biscuits
    Pineapple

    Getting great feedback from the customers, not many a handful really but the reward I'd that they are enjoying the food.

    @ CaiHong - glad to hear that my strawberry addiction is doing some good. =) And so happy to hear things are going well with the restaurant.

    Hey y'all.... My kids are sick, and now I feel a something coming on!!!! Scratchy throat, nasal drip, dry eyes...what do you think? A cold???

    Eating a LOT of fruit today....mostly citrus. I'm in bed and plan to stay here a while....

    @ Renee - my husband and one of my girls had this same thing. My husband starting consuming mad quantities of Vitamin C and it seemed to help. My daughter was hit harder - she slept until 11am yesterday. Unheard of!!!
