    For Brunch I'm having a Thai Yogart Parafait:





    I love making Yogart with Thai Coconut Meat! Using the Vitamix, it's really smooth and the Strawberries really give it a great flavour! I also had some Raw Granola which made a FABULOUS Parafait!

    Lots of great ideas.
    Rennee I must reach coconut yogurt as they are in a abundance here.
    Day 15 for me and really the only thing I miss is coffee and it's the ritual more than anything.
    Smoothies, juices and lots of fresh fruit. salads dips and crackers.

    One of the ladies who is doing the diet, is sticking to just smoothies and juices and any sweet teat I might make and she might fancy. She comes in in the morning, picks up her smoothie and juice and we have a chat. She is looking great by the way and has lost weight. She told me she never loses weight and this is the only diet where she has. She has tried most of them.
    The amazing changes in people in such a short time is astounding. I definitely have a convert here.

    Wow - back from trip to mouthwatering pictures! Yum.

    Renee - that tabouli salad looks super good!! They all look super good, but something about that one is calling my name. Question for you: my husband & I were remembering how much we like (not raw) tofu scramble. Do you know of a raw recipe that is similar to tofu scramble? Obviously w/o tofu, but maybe with those same flavours?

    Yesterday was skiing all day and then on the road until midnight... tough day to be raw, but we managed. Minus the cup of coffee I had to have as I was driving in terrible white-out conditions at 10pm at night after skiing.

    B: Banana-cacao smoothie with maca and match
    S: Raw apple-walnut bar
    L: Green salad with mushrooms, tomatoes & the last of the raw tahnini dressing we brought on our trip
    S: Raw apple-walnut bar, handful of nuts
    D: Mixed green salad with broccoli, sunflower seeds, mushrooms
    S: Two handfuls of pecans - this is more than I would normally have but having the baggie right there in the car.... hard to resist!

    Day 17,
    Felt a bit low yesterday, I think it's because my sleeping patterns are so out of wack.
    Green Smoothie,
    juice, watermelon pineapple and passion fruit. Coriander pesto, crackers, apple and pear biscuits, 2 chocolate truffles. Mango, dragon fruit, dried watermelon, dried mango and handful of cashew nuts.
    Interesting looking at what I ate, feeling low I gravitated towards sweet foods to make myself feel better, fill the void. Before raw it would be chocolate cake icecream and lots of it, still felt empty but then sick as well.
    it's great to have healthy sweets alternatives to turn to.

    Today I feel much better

    Renee I checked out your detox box. I think this is a total bargain, in what you provide.
    I know this is not a commercial site and respect that but I would love to speak to you further about what you are doing.
    My raw cafe opens next week. Prior to this I have been preparing raw meals from people that requested them. I find packaging a big headache, I don't use throwaway containers, I use these 3 compartment stainless steel tiffin carriers. I am looking around for suitable containers

    the forum software is flexing its muscles when that happens. It seems to be without rhyme or reason but I see that a mod has passed it so we can read what you posted.

    After 2 crazy, crazy work days, I'm back!!!!

    Queeny: there is a FANTASTIC Breakfast Scramble by Ani Phyu!!!!! I used to make it when I first went raw...it's wonderful!!!!

    CaiHong: Thank you!!!! That's SO wonderful that you're opening a Cafe!!!!!! We totally need more of them in this world!!!! Feel free to email me anytime!!! :). I actually started off that way too...until I found out it was illegal to do it out of my home in TX... So, from there I decided to be a personal Chef and make food in the Client's home. Actually, that's how I met my business partner for Tru Meals! She hired me as her Personal Chef and the rest is well...... I would say history, but since I'm do it now I.....hehehehehe!!!!

    As far as packaging goes... I started out using the same containers I got from Sams! Take a ride over to your local restaurant supply store!!!! You can get fantastic containers by the box full!!!! Sooooo much better than the 3 compartment ones! And, they are pretty cheap, too!
    You can get bags too. Another thing you can do is look on the back of containers being used by your local restaurant and order straight from the company, but that may be costly since they will probably expect you to buy in bulk. Let me know how it goes!!!!! I'm SO excited for you!!!

    I worked last night till 4AM, so I've only had about 5 hours of sleep!!!!! But, I made some FANTASTICLY DELICIOUS meals last night!!!!!! I am having SO much fun!!!!! :dance

    Gotta make more Kale Chips! Man, they sure didn't last long! Especially with me going in the dehydrator every time I passed it!!!! Hehehehehe!

    Thanks for the thumbs up Renee. I am in Vietnam, Hoi An a top tourist spot. If you ever get out this way lunch is on me. I think you would get such a kick out of visiting the markets.


    Day 18

    Yesterday I had

    Green smoothie
    A small vegetable juice
    too many dried watermelon pieces
    walnut basil pesto with crackers
    A big salad, crackers and pesto
    2 choco truffles.

    I filled the 9 tray dehydrator with
    Tomatoes
    fresh shredded coconut
    flax seed bread

    I made these amazing lime, coconut biscuits, I tasted the dough and it was fantastic. I got the recipe from this website, I substituted limes for lemons and agave with coconut sugar.

    Hi guys!

    @ Renee - thank you so much for the link to the scramble. Am going to check it out now. I usually like Ani Phyo's recipes.
    @ CaiHong - coconut biscuits sound amazing!
    @ MysticTree- I'm in the middle of dehydrating the scramble recipe you pointed out ... will let you know how it turns out.

    You guys are really inspiring in that you are creating a financial life for yourselves in the raw industry. My husband has been bugging me to try to sell some of the things we make at a local co-op. Maybe I will take the plunge after reading about you guys....

    Yesterday was a weird day b/c I was out with a large group for many hours and didn't get to eat right so I feel "off" today....

    B: Pineapple-banana smoothie with matcha and wheatgrass powder
    L: Horrible salad at a chain restaurant: iceberg lettuce, underipe avocado, & salt.
    S: Handful pistachios
    D: Raw brownies

    As you can see, not the best day.... but since I don't usually eat like that I'm not too worried. I just feel really tired today and no wonder - I am sure that wasn't nearly enough calories. SO looking forward to my normal food today!!

    Greetings everyone. I have been away for awhile (maybe a month or so?). Rather than making excuses, I will just say that I am back. :)


    MysticTree, ReneeH, queenbee - I am glad to see your posts again. :) I only looked at the last page, but it's nice to be back amongst folks I know.

    CaiHong, congrats on 18 days! I too have coconut in the dehydrator. I wish I knew what to do with the stuff. I consume more coconut milk than coconut meat, it seems.


    Today, I started my 100% raw day with:

    * juice of 3 apples mixed with 3 TBS chia seeds
    * 2 oranges
    * 1 apple
    * 4 small (50g) "sesame balls" made of ground sesame seeds, dates, cacao and agave

    The fruit was yummy but it made me super hungry (as always). I am feeling better after the sesame balls. I still have two bananas and an apple in my lunch bag here at work, but I am afraid to eat them. Fruit only brings me soul-crushing hunger. Anyway, I think I'll let that fruit hang out in my bag until tomorrow.

    I haven't had a salad in a LONG time. I should probably do that tonight. If my romaine has gone 100% bad, I will probably end up eating veggies dipped in raw ranch. I do have a ripe avocado. I suspect that may find it's way into my belly at some point tonight. I will post again later.

    Again, it's nice to be back and see posts from familiar folks. :)
