This morning I'm eating a salad of red swiss chard, romaine, and some homemade, pickled chayote. Dressing is just lemon. I never knew chard was just beet tops, nor did I ever expect that I'd like them so much! I dislike celery, but I find I really enjoy chard stem. It's like celery without the horrible flavor I associate with celery. (I normally really like vegetables, so I couldn't tell you why I don't like celery. I do like the hearts, but not enough to wanna go through the rest of the celery.) Also, the pickled chayote aren't totally raw, but they're pretty close. They had warm brine poured on them. I made them before I started eating raw things, but I know for sure I could make a raw version. I'll have to do that later and post for you guys.
