    Default Christmas Cookies!

    I just received an email from Nouveau Raw dot com (subscribe if you haven't) and had to share her beautiful Christmas Peppermint Pinwheel Cookies! She's a raw artist!

    The pictures look awesome. I tried her honey oat bread. It was pretty good.

    Peanut Butter Cookies
    About 50 cookies

    2 cups rolled oats, raw & gluten free
    1 cup *oat flour
    1 cup fresh ground peanut butter
    1/4 cup raw agave nectar
    1/4 cup raw honey
    1 1/2 tsp vanilla extract
    1 tsp sea salt
    Add water if needed

    *To make your oat flour, place 1 cup oats in the food processor and process until it becomes a fine powder.
    Add in the remaining ingredients and blend until well incorporated.
    You may need to stop a few times and scrap the sides and spread the dough around evenly.
    Cover a cookie sheet with wax paper and place the cookies on the tray. Form balls and flatten with a fork.
    Cover with plastic wrap and freeze.


    This recipe originally called for 1/2 C agave AND the honey but was way too sweet to the point it overpowered everything, all I could taste was sweet. It also called for 1/4+ C of coconut oil which it does not need in my opinion. I dehydrated some of the cookies and froze some and eventually put the frozen ones in the dehydrator. I dehydrated them overnight at 105. Oh, I also used almond butter but I will use fresh peanut butter next time cause I think it will be better with a nuttier taste.
