Do you eat the collards from the collard wraps just as it is, or do you soak them in warm salt water or something?
I do not know other people's methods but usually I soak them in warm water with juice of a lemon for 10 minutes then I dry the leaves off with paper towels and using a knife thinly slice down the central stem (to make it easier to bend the leaves for wrapping) plus that central stem sometimes tastes bitter.
Also, being that you are in Brasil, I am assuming you are using couve. I have to admit, that I think couve is a little bit different than the typical collard greens from the US and it tends to be a little stiffer so I would highly recommend soaking it, if you are opposed to soaking it in warm water even just a little lemon juice should do the trick.
P.S... Gianni, I posted on your visitor board.
