Default Gourmet Nut-Free December!!! Featuring LOLF and RFFE!!!

    Hi Raw Family!!!!

For the Month of December, I will be making yummy RAW dishes featuring Alissa's FABULOUS books, Living on Live Food and Raw Food For Everyone!!!

I started today with fruit taken from my co-op share!!! I'm planning to have a Greek Salad for dinner (RFFE), so my first nutless recipe is the Breadsticks to go with that later. I made them early this morning, so hopefully they will be ready by tonight.

I am really looking forward to seeing what you make. Those bread sticks look good already but when they are done could you take a snap of one broken in half so we can see the internal texture.

    Absolutely!!! :-)

I wanted to make something with my Thai Coconuts, and I wanted something I hadn't tried before, so I decided to make the Thai Coconut Soup in LOLF, page 363.

I didn't expect to get full off of this, but I TOTALLY did!!! It's kinda like a Smoothie in a bowl, so I added Pineapple chunks to mine! SOOOOOO good! I love the Cumin in it! She's right when she says, "Lightly exotic and oh, so simple!!!!!"

Looks really good. I generally use hemp sprinkles. I get organic, shelled hemp. It's so good :)

Renee, those breadsticks look yummy. What ingredient are you using instead of flour?

I'd rather eat vegan and look like a tree than eat cow and look like a pig.

It's about 4:30 am and I'm in my fabulous kitchen!!!! I'm in a kind-of Citrusy SALAD mood today, so I'm planning to make Bacon, Lettuce, Tomato, Avocado Wraps (RFFE page 328) with alterations. I decided to keep it simple, so I'm leaving out the Wrap bread which is made with Almond Flour. I'm just going to use Butter Lettuce as the wrap. The Eggplant Bacon has been marinating an hour and I'm putting it in the Dehydrator right now, so it should be ready by lunch time. I can just imagine eating 10 of those!!!!:

I also made Citrus Water which I leave on the table as a reminder for me to drink more water throughout the day:

For dinner I'm planning the Crunchy Thai Salad from LOLF page 447. I've never made this before, but from reading the ingredients my mouth is watering!!!!!

Later this morning I want to try the Green Apple and Parsley Juice in LOLF page 540. Sounds like a yummy combination. Since I'm juicing Apples anyway, I'm gonna use some to soak Chia seeds for breakfast and make Chia Pudding a-la-RobH...!!!! I finally tried it and It's delicious!!!

Think I'll make it thicker today, though... :-)

So, what are YOU eating today???

I know some people don't like flax and recently I found a recipe that uses oat flour/meal instead of flax if you want and since I had raw oats I made oat flour in my bullet and used that. It was really good.

I was thinking "now who doesn't like flax?" and I remembered - I like it in cooked things but not in raw things. Weird. So good to know about those substitutions!
