Default Tips for cutting sweet potatoes

This isn't really about raw, because we usually eat them cooked as french fries, but ocassionally raw as dehydrated chips. Has anyone found a good way to french fry sweet potatoes? We've tried cutting them, but it's way too hard on your hands and takes forever. We've tried a mandoline, which works okay, but ours is pretty old and breaking and we haven't had any luck finding a new one that does a good job with them, as they're too hard for most of them. And we got a potato french fry maker machine thing, which you push the lever and it cuts it into french fries, but besides the fact that the potato has to be cut really small to even fit, the sweet potatoes are way too hard for it to cut through and it won't last long at all. So, has anyone found any better ways to do this that don't take so long and are easy to do?

You aren't allowed to ask that here because your query is non-raw. For dehydrating though I would probably use the tagliatelle blade on my spiraliser.

A large knife for large objects. Slice a small piece off one side to give a stable platform.

A bread slicing board (base with two sides with slots) might work to hold the spud for easier slicing. If needed cut to fit two potatoes so the board is filled with potato, so they won't shift.

Run the tater through a food processor with the thick slicing blade. Then hand cut each slice (or stach of two or three slices) in to fry strips.
