After my bean sprout disaster earlier, I decided to make something else - a cauliflower "tabbouleh" variation with curry.
Anyway, I took half a cauliflower, chopped that up into florets and set aside. In Blend-tec, equal amounts of raw cashews and coconut shreds(about 1/3 cup worth of each), a half-tsp. of garam masala, a teaspoon of curry powder, a bit of salt and ground that up well. Then I dumped that into mixture into the food processor with the chopped up cauliflower and the juice of a lime and processed until coarse chunks. At this point added a handful each of chopped cilantro and mint leaves, processed some more until like regular tabbouleh that we're familiar with, with the coarse green flecks of the herbs. Dumped all into a bowl with some raisins added and stirred that up before putting into a container for later. Although this is yummy now, it will be even better tomorrow, either a scoop in with a bowl of greens, or wrapped up in a collard leaf. This does go together fast!:)
