    Default Rob's Rawk-a-Mole Chips

I had to give ReneeH credit for the name. She likes them, apparently, and so do I. I figured I would share.

1 Avocado's Worth of Guacamole (however you like it)
    1-2 tablespoons of olive oil
    a little extra salt (optional)

If you need a guacamole recipe, here you go:

    1 avocado
    some chopped onions
    some chopped tomato
    1/4 teaspoon of sea salt

Ok, so make your favorite guacamole in a VERY large bowl. Add the extra olive oil to loosen it up. You could also add water or lime juice. You want to thin it out just a bit so you can coat the kale easily. Adding all the kale causes the salt-ratio to go down. To correct for that add a little more salt than you normally do, but don't go nuts.

Next, remove the stems from your kale and tear it into smaller pieces.

I notice if I just dump all the kale in the bowl, it doesn't mix very easily. Therefore, put about half the kale in the bowl (you need a REALLY big bowl). Mix and mix until everthing is covered. Add the rest of the kale and repeat.

Next, grab gooey handfuls of guac-o-kale spread it on your dehydrator sheets. You will notice the oinions and the tomatoes stay in the bowl. No biggie. Pick them up and spread them on top. The dehydrated onions and tomato are SOOO yummy. Sometimes I add more onions and tomato than I normally do for guacamole so just I can have more yummy bits.

Anyway, dehydrate this until it is crunchy and enjoy.
