Default Looking for an EASY cashew sauce for some raw zucchini

Hey everyone! I have been looking for an easy recipe for a cashew sauce that will work well with some raw 'noodles' I know a lout of the recipes use oil and I am not keen on using it..I am looking for simple stupid ^_^ maybe just soaked cashews and some red pepper? I don't have a dehydrator so I can't use sun dried tomatoes any ideas?

Cashews, water and your favorite spices should work! For an alfredo type sauce you could add garlic, sea salt and maybe some nutritional yeast if you have it. Remember to taste as you go along as raw garlic is quite strong. Good luck!

I found this a few days ago and I might just try kelp noodles again (or carrot noodles...Ü):

walnutty, I was googling where to buy "kelp noodles" and I stumbled onto a place that serves raw food in my area. I had no idea it existed (I have been looking too). I am so excited to try raw food that I didn't (try to) make. Thanks for the unintentional help. :)

do you have to dry the cashews after soaking? or do I have to soak them at all?

If you want to remove the enzyme inhibitors they do need to be soaked. For a sauce I don't dry them, I just use the soaked and rinsed nuts or seeds. This is general information not information specific to this recipe as I have not made it.

You are so fortunate! I live in a huge city (Phoenix) and there are a lot of raw foodists, yet there is not one single raw restaurant! Lucky!!!

Make just a very small portion first then you won't have to throw much away if you don't like it! I am not too big on recipes either. When I first started raw a decade ago there were NO recipes, except for salads!...lol...

I just use a little bit of Olive Oil, chopped basil and Parma for my zucchini noodles. It's very simple. Sometimes I add tomatoes.
