    Default How do I make thin-crunchy crackers?

    I want to make some crackers this weekend, does anyone know the secret to thin and really crunchy crackers?

    Yep, add almond flour.

    Not really a big cracker fan, but through trial and error, I finally came up with my own recipe for crispy corn chips that even the SAD eaters in my family like.

    Ingredients

    4.5 cups corn
    1/4 cup sunflower seeds (soaked)
    2 Tablespoons red onion
    1 jalapeno pepper (you can add less to taste)
    1/2 cup lemon juice
    1 large red pepper chopped
    3/4 almond flour (this is what makes it really crispy)
    1/4 Tablespoon chili powder (more to taste)
    1/2 cup ground flax soaked in 1/2-3/4 cup water for 30 min.

    Process everything but the sunflower seeds until well blended, then add the sunflowers seeds and pulsate until well incorporated.

    I usually flip them after they've been in the dehydrator for 4-5 hours, score 'em, then continue until done.

    Thick or really thin, these really are the crispiest crackers I've ever had.

    Do you use frozen corn or fresh?

    Walnutty - I've used both, but since it is in season now, I've been using fresh.
