Guacomole Recipe
I also like this one admittedly though, I don't make it as much as I use to.
3 small/medium avocados
1 small onion
large handful of cilantro
3-6 cloves of garlic (depending on how much you like it)
2-3 hot yellow peppers (you can leave this out if you don't like spicey)
1 fresh squeezed lime
I just throw it all in a food processor and blend to a smooth consistency.
Optional:
stir in diced tomato
top with freshly chopped chives
You can play around with cumin, corriander, chili powder by adding to the initial mix.
Substitutions:
I suppose you can replace hot peppers with a jalapeno or two.
You can use a lemon if you don't have lime. I prefer lime.

I like to keep it chunky (mash the avocados with a fork, chop everything else fine), add lime zest, and use habanero peppers if I have them For authentic guac, it's essential that the onions are red, don't deseed the chilli, and keep the stalks in the cilantro. Also it tastes better one you let it rest for an hour.

Habanero sounds HOT lol. Onions I never noticed much of a difference. Deseeding will just make it more mild. Seeds hold a lot of capsacin. As far as chunky goes, I agree with you it's nice. But for simplicity sake I use a food processor.

I have never really been successful with Guacomole and i was trying to find a good ratio. So it seems 1 lime for 3 avocado.

My guacamole is SO simple...lol... I just mash the avocado and add org garlic powder!

Oh, I don't know...I've had one person tell me I put too much lime in. A food processor is nice cause you can slowly add stuff and see what tastes good.

I have noticed that the longer I am raw the less tart lemons and limes taste.

Oh, I agree! I actually now love eating a salad with just fresh lemon juice squeezed on top of it!

What would you eat guacomole with? I'm used to eating it with Tostitos and crackers, I bought a few Avocados yesterday and realized I don't know what do do with them now!

I like using thinly sliced organic cucumbers!
But you can also make raw tacos with it!
Take a romaine lettuce leaf. Along the inner spine add taco "meat" (not necessary, I usually don't make it, but some people love it), then guacamole, then pico de gallo (or any favorite raw salsa), then grated carrot (mock cheese). Eat like a taco! YUM!!!

raw crackers, in smoothies, Revv makes a lemon mousse, sliced up in salad, mooshed up and used as a face mask, to make creamy sauces and dressings, non-banana base for ice team. Lots of things.

You can get or make raw crackers to go with guac. Or you can use avos to make the other things.

My favorite recipe is:
3 avacados
lime juice
seeded, diced tomatoes
salt
cumin to taste
chopped kalamata olives
I sometimes stuff squash blossoms, put on crackers, fill mushroom caps, use as a topping for a walnut taco salad, slice jicama the shape of chip and dip. The possiblities are endless. I LOVE avacodos!!
