    Default cucumber pasta

    My spiralizer just arrived YAY! Any easy recipes for cucumber pasta? I was wondering, will it be okay if I make it the night before so my daughter can take it to school the next day?

    Yayyyy -- CONGRATULATIONS!!!

    I don't really use cucumber for noodles, I use zucchini! I usually have it one of two ways:

    * with EVOO, fresh chopped parsley, black pepper and soaked and chopped sun-dried tomatoes

    * with cashew cheez sauce (blend handful of cashews with water, then add 1/2 red pepper, chunk of onion, nutritional yeast, turmeric, lemon juice)

    Alissa has a great marinara sauce recipe and there are lots of other recipes here for the zucchini noodles, too. I think some people also make noodles out of butternut squash, but I haven't tried that yet!

    I've also never tried making cucumber noodles, like qwerty I use zucchini. The zucchini noodles holds up very well overnight in the fridge, I don't know about cucumber though. It might get a bit watery? Then you could just drain it off? I'm guessing..

    I LOVE cucumber noodles! I usually eat them right after I make them, though. Let us know how they turn out if you make them the night before, k?

    Thanks everyone!

    I made cucumber noodles but we ate them right away. I think they would get too watery for the next day. I will try zucchini noodles too though. :)

    Hmmm....you know what might be cool? Remove the core of the cucumber and spiralize it. Then turn the noodles into spiralized cucumber pickles. A nice side/garnish for your meal. It could be sweet and spicy, or more vinegar flavored, or garlicky.

    You can make the noodles the night before, but double check to see if they need to be drained the next day. I used to put my zucchini noodles in the dehydrator overnight to warm them. They got a little softer that way and really absorbed the marinade. I have seen people post that they like to freeze them and when they thaw they get a bit softer texture. Disclaimer: I have never tried that. :)
