chia seed pudding
This is awesome and easy to make!!!
3 tablespoons chia seeds
1/2 cup unsweetened nut milk
2 tablespoons sweetener (brown rice syrup, maple syrup, stevia or agave)
1 tablespoon cocoa powder
1/2 teaspoon vanilla
mix all ingredients together. The cocoa takes a bit to mix, but it will mix eventually. Leave it for 20 minutes and stir
occasionally or put it in the fridge overnight for the next day.
Yummy!!!
p.s. chia seeds are high in the omega oils!!!

Yum, thanks for this recipe! I usually use the one that blends up cashews, water, agave, vanilla and cinnamon. Yours sounds lighter using the milk instead of the whole nut. Definitely going to try this! :)

Sounds simple and yummy. Need to order chia seeds. I like that they give a nutless option by using them. I love nuts, but prefer not to have them in EVERY recipe. KWIM?

As you can tell from my January Journal, I LOVE Chia Pudding :)
I make my homemade almond milk. I add 2 scoops (which I guess would be 2 TBSP) to 1 cup of Almond Milk.
I let mine sit overnight in the fridge, then I add Lucuma Powder and a chopped up ripe banana. This is my favorite dessert :)
I've also added Raw Cocoa Powder instead of the Lucuma powder and it's yummy too.

so, I only bought about a half of a cup of the chia seeds from the bulk section at W.F. Used them in one day...yesterday. My daughter came home from school asking where the pudding was. I told her it was gone. She was sad

sounds better with the lucuma powder and banana. Also, it's sooooo much better when it sits in the fridge over night without a doubt!!! Wow!!!

I love chia pudding, but I've never tried Lucuma powder before. I've heard it mentioned often in lots of recipes. What does it taste like and what are its health benefits? Thinking about ordering some!

when I purchase my bag of lucuma powder, the gal at the store said it's supposed to have a butterscotch flavor...the bag says maple. It's used as a sweetener. The nutritional section of the bag has zeros near everything except for calories...60 per tablespoon and carbs. Here's what livestrong.com says:

The report of the study concluded that lucuma may have anti-inflammatory, anti-aging and skin-repair effects on human skin.
