I mix different seeds all the time and they do fine. (radish, alfalfa, clover, fenugreek, broccoli, cabbage, etc).
You can eat them at any stage ... newly sprouted with tiny tails right up to full sized sprouts with leaves. I munch on them and put them in salads at every stage.
I started with mason jars and they work well. But took up way too much space to tip them between rinses, so I now use the easy sprout containers -- better airflow and stackable so they take up very little space. But it doesn't matter what container you use .. just eat them up as they grow and enjoy. Sprouts are fantastic!
