    Question Garlic

    My honey stopped at "The Garlic Capitol of the World" on the way home from San Francisco yesterday and brought me a whole bunch of garlic! Now, I'm not a GREAT fan of raw garlic yet... besides throwing a clove into a glass of homemade juice, what's YOUR favorite garlic recipe?... or recipe that has garlic in it?

    I use garlic in salad dressings and pesto. I don't really have a recipe, I just make stuff as per non-raw but using raw-vegan ingredients.

    Leaving out the cheese in the pesto has always been my preferred method and I use wild garlic leaf and stem in the spring rather than cultivated garlic.

    I also make pesto using rocket (arugula) rather than basil and pumpkin seeds rather than pine nuts.

    I use to add garlic to practically every savory meal and some sweet ones too. It's great in soups and salads, in salsa, guacamole, marinara sauce.

    Mango Tomato Soup
    1 large or 2 sm Mango
    1-2 Tomatoes
    Garlic clove
    Optional: mild greens
    Blend.

    Celery Tomato Dressing
    ½ -1 Tomato
    1 Celery stalk
    ¼ cup Orange juice
    Garlic Clove

    Sometimes we just put peeled garlic in a jar with raw, unfiltered apple cider vinegar and let them sit a while (we put them in the fridge). Can't remember how long we let them sit but they get better with age. I think you could probably put some kind of pepper in with it, if you wanted it spicy.

    We just ate the pickled garlic by itself or threw them on salads. Yum!

    (we also put tons of garlic in just about everything we make, whether or not the recipe calls for it.)

    Haha, this is a weird concept to me, as well. I also add garlic to everything!! I too love to make basic soups with a bit of garlic, like this one:

    Tomato soup
    1 cup of roughly chopped tomatoes (try not to lose any liquid when chopping)
    1 sundried tomato slice
    1/4 cup cashews
    3/4 cup water
    1/2 to 3/4 teaspoon celtic sea salt
    1 small clove garlic
    1/2 cup more diced tomatoes (reserve – do not blend)

    Directions:
    1. Throw all ingredients (except last 1/2 cup of tomatoes) in a high-speed blender and blend up ’til nice and smooth and well mixed. You can let this raw tomato soup recipe blend in the Vitamix or Blendtec blender for a little extra time so that the heat of the blades and the friction actually warm up the soup.

    2. Transfer raw tomato soup to a bowl. Add the remaining 1/2 cup of diced tomatoes and mix gently with a spoon.

    And, also, I love raw alfredo sauce made with lots of garlic and served over kelp noodles. Yummmmmm!!

    You know what's funny to me since eating raw? Soup. I just don't see the purpose of sitting with a spoon and eating something I can drink. I guess that comes from making smoozies. To me, it's just one more smoozie...
