    Default The mighty Chilli

Two weeks ago I dried some Habanero chillis, and ate them last night. One slice was hot...then I braved it and ate 3 (slices) at once. Yep - the tears were pouring, nose was running and tongue was burning. A funny sight; a funny experience. And yet despite tucking into something less hot - some fresh cayenne peppers afterwards, my stomach never complained. Onions and garlic get more reaction than these little fire-sticks. Strange, and its why I enjoy chillis so much. So in honour of the little devils, here's today's lunch & what's growing around the house:

Buckwheat cracker with tomato, fresh chives & basil, chopped fresh cayenne peppers, salt, pepper, oil and lemon juice:

Cayenne peppers ready for the picking. These have such a nice flavour and are great eaten fresh.

The dried habaneros I tangoed with. Hot hot hot.

And just some regular chillis. Nice dehydrated, crushed and put into a grinder.

Any funny chilli stories, pictures of your own, or suggestions for tasty varieties to grow?

You do it for flavour or does it help with cleansing?

I wish I could handle the heat. My SO loves spicy foods, not just for the heat, for the flavor. I never even knew they had discernible flavors until she told me. To me they are just painful, even things labeled mild!

I might try dried chipotle chiles Sunshine. They give a lot of flavor, but almost zero heat. I love them! I've been using dried Pasilla chiles as well lately since I have a bag of them. So scrumptious!

    Call me also a Chilihead,

I love Chilies, even my mexican father in law said, I would put shame on the Mexicans, because I like it spicier than them.

I've never eaten chipotle...are they just smoked & dried jalapeños?

This must be impossible to eat:
The world’s hottest chilli is from….

The UK’s Cumbria!? Chilli farmer Gerald Fowler crossed three of the hottest varieties to scorch the Scoville scale. His Naga Viper rates an astonishing 1,359,000 which is a measure of the active ingredient capsaicin. The most popular chilli, Jalapeno, measures a paltry 2,500 to 5,000 Scoville units.

They appear to smoked Jalapenos Not raw. I don't mind doing some non-raw seasonings, but for those who do, looks like chipotles are out.

From looking around it appears that they're just left to dry in a smoky environment. It look like they might still be raw.

    Hey scyn,

Enough about the chillies. Are they store bought buckwheat crackers. Home dehydrated ones. Do you have a recipe?
