    Default How to make Date Paste (as a sweetener)

    I've always wanted to make date paste. Russell James has a very detailed video that explains it really well.

    I've gone ahead and copied the recipe down from watching his video:

    Date Paste - Russell James

    Into the blender put:
    1 1/2 cup water
    1 cup medjool dates, pitted
    can add a pinch of salt
    can add a squeeze of lemon juice to help preserve freshness

    Blend until completely blended, no bits.

    You need to use about 50% extra using date paste compared to agave nectar. Mark the date on the jar when you made this.

    Will keep 2-4 weeks in the fridge.

    If using a food processor, start off with less water than you would in a blender, adding it gradually rather than all at once at the beginning.

    I saw that video - excellent! My intuition told me from the beginning to use dates in some form as a sweetener rather than agave nectar, and that mode strengthened after seeing the agave controversy, so I've never gotten into agave nectar. Dates it is, and so simple!

    Sheesh I posted that back in June last year and I still haven't made any! I want to though. Maybe I'll try half a recipe ~ *Ü*

    It only takes a second, and if you're using it immediately you don't need to worry about the salt/lemon~

    Thanks drolemil ~ I honestly don't know why I haven't made the paste yet. I even bought dates just for making it. I think it's because I don't know if I'll get it all used up, which is just silly!

    That does it, I'm going to soak dates tonight, enough with my excuses! :)l *Ü*
