What's your favorite entree?
My husband and I are on day 17 of our raw food challenge and I need some new entree ideas. We've eaten the heck out of kale and avocado salads, have done the 'egg salad' and almondaise, and disasterously tried raw spaghetti squash sliced with fresh pesto/marinara on it but the squash was WAY too watery.
I need some new ideas for main dishes. We have yet to try pizza on dehydrated crusts, but I saw an easy recipe for an almond flour, Italian seasoning and water crust that I want to try.
Aside from that, I seem to be finding a ton of sweet dessert recipes, but I'm craving something different. Actually, truth be told, I'm craving fried eggs and toast. LOL- are there any good substitutes for that? ;D
Seriously though- we have 2 weeks to go until our self-imposed deadline and I'm finding the cravings are popping up because I'm getting bored of the same food over and over again. We're also not finding quite the energy level we were hoping for, but I don't know if 2 weeks is too soon for our metabolisms to readjust.
here is my absolute favorite recipe for dinner:
Garden Pate (Ani Phyo's recipe):
1 cup almonds
1 tbsp grated ginger
2 cloves garlic
1 tsp sea salt
2 carrots, chopped
2 stalks of celery, chopped
1/4 cup yellow union
2 tbsp extra virgin olive oil
juice of half a lemon (1 tbsp)
1/2 cup raisins
-process almonds into a powder
-process other ingredients EXCEPT raisins
-mix everything together
-scoop onto a bed of greens, wrap in a nori wrap or stuff a bell pepper.
Another favorite is zucchini pasta with Jonsi and Alex's sun dried tomato pasta sauce, which you can find here
some other ideas: veg sushi rolls, nut burgers, veggies with red pepper hummus and guacamole, and I love putting fruit in my salads like pear or blueberries, and making funky dressings like ginger/orange, or mustard/lemon
Not my favorite, cravings solution
I haven't made this recipe myself, but I have tasted it. It's delicious and I think way better than egg salad, which is something I never liked anyhow. If you put it on dehydrated crackers or bread it could be satisfying for your cravings.
Egg-less Egg Salad
1 Ĺ cup Cashews, soaked
Ĺ tsp dry Mustard-optional
1 Tbs Apple Cider Vinegar
Sm Lemon, Juice
1 Garlic clove
1 Ĺ tsp Salt
Ĺ cup Water
Optional: Ĺ tsp Turmeric (for color)
Blend water, lemon juice, garlic, salt & cashews & pour into a bowl. Slowly stir in mustard, vinegar & turmeric. 5 day fridge-life.

I love live gardenburgers from the Complete Book of Raw Food.
I usually make half a recipe because it's just me eating the raw food in our house. A whole recipe would make a TON of food. But it's sooooo good, and would be awesome with a nice raw ketchup. I either roll it up in lettuce leaves or use it as a topping/dressing for a salad.

1 lb favorite nuts, unsoaked
1 lb carrots, chopped
1 medium onion, chopped
1 tbsp sweetener (such as honey, very ripe banana, raisins)
1 tbsp olive oil
1 to 2 tbsp poultry seasoning (or other seasoning)
2 to 3 tbsp nutritional yeast (optional)
sea salt to taste
Grind nuts in food processor. Add carrots, onion, and remaining ingredients except paprika and grind in food processor.
Mix well. If it isnít firm enough, add one or more of the following thickeners: dill weed, dried garlic, dried onion, dried parsley, nutritional yeast, psyllium seed husk powder, ground flax meal.
Form into balls, cutlets, or fillets, and sprinkle with paprika before serving.

Put some salt on water producing vegetables (like cucumbers, squash) that and the water will drip off and also make the vegetables less gassy

Fun thread! have been mono eating of late, but have always loved Alissa's spinach dip. I add ground nuts to make it more like an indian dish and just love it on cucumbers or in rollups. Really somehow just never get tired of it.
