    Default My dinner tonight...

    ...at least as soon as I can get to TJ's to purchase the organic veggies for it! Oh my gosh, this pic is making me drool!!!

    Description

    Kelp noodles and veggies galore drenched in a spicy Asian inspired almond ginger sauce. 100% raw and health promoting! Let the sauce sit with your kelp noodles for at least 8-10 minutes or so before devouring, as this will soften the noodles giving them an absolutely delightful texture! Dinner is coming right up....

    Recipe by Selene Vakharia

    Ingredients

    Stir Fry:

    1 package kelp noodles, well rinsed and drained
    2 cup baby spinach, chopped
    1 cup mushrooms
    1 med carrot, julianned
    3/4cup cucumber, chopped
    sprouts

    Dressing:


    3 tbsp almond butter
    juice from one lemon
    2 tbsp soya souce
    1/2t tbsp ginger, grated
    1 clove garlic, derooted
    1 tbsp water

    Methods/steps


    Stir Fry:

    1) mix together in a big bowl

    Sauce:

    1) blend together

    Assembly:

    1) mix before serving and top with sesame seeds. Store sauce separately from noodle/veggie mix so that veggies don't get soggy.

    looks great . but i cant get over thought that kelp noodles taste as hideous as the kelp powder i use , lol .
    guess i'll have to try the kelpnoodles some time

    kelp noodles have zero taste MR. they are just rubbery long strings.

    No, they do not have any taste at all. If you soak them in fresh lemon juice with salt (I used Real Salt) they completely lose their crunchiness and become the texture of SAD angel hair pasta. Until I learned that trick I thought they were gross! Now, I love them! Because it is uncertain if they are truly raw, though, I only eat them once every couple of weeks. Since a pound of kelp noodles is only 18 calories that would make me 99.99999999999999999999% raw when I eat them...lol...and I am fine with that!

    that looks amazing..... I still haven't tried kelp noodles myself. it seems like they'd absorb flavors better than zucchini nooodles...!

    i haven't had the experience of them absorbing flavour at all mpure. perhaps walnutty has had a different experience?

    I will have to check the next time I make something with them. I am not sure if they "absorb" the flavor or if the sauce just sits on top of them...great question!
