    Default Kale chips- oven??

Okay so I don't have a dehydrator....I baked some kale chips in the oven on the lowest temp (250) for like ten minutes. I drizzled them with olive oil and salt. Seriously GOOD. OMG. But, are they "as good" for you when you bake them in the oven like that?

How do they come out in the dehydrator as opposed to the oven? Mine were still kind of "soft" with a little crunch, I didn't want to cook them too long. Salsa tasted amazing with them but I was basically dipping my finger in the salsa and yeah...not so much dipping the chip, lol....

    any insight here?

I wonder whether heating the kale a few minutes at 250 degrees is really any worse than dehydrating at 110 degrees for 6-12 hours. The enzyme argument aside, I don't know if either method compromises nutrients in the kale.

If you like them and it is the only way you can make them, then why not do it. Your eating more kale and not eating other unhealthier snacks. Sounds like a WIN-WIN situation. :)

yeah, thats kind of what I was thinking. I guess I'm more concerned about heating the oil...not sure what that does to it...

Good point. I hadn't considered that. Still, if you do it in moderation.... would it be so awful..... :);)
