    Default cookie recipes?

    Does anyone know of a cookie recipe that doesn't need a dehydrator?? All the ones I've seen so far need one. I'm a poor student so can't afford such luxuries I'm afraid

    Most don't really need them. They're just soft and chewy instead of crispier. Just blend some dried fruit and nuts and you've got cookies.

    Ditto Revvell!!! You can also refrigerate any cookie recipe and it will harden for you!!!

    Also, have you tried Alissa's Date Nut Torte! It is to LIVE for!!! AND, no dehydrating needed!!! ;)

    Yes! You can go to my blog and search for "cowboy cookies" for the picture (I don't have it anymore), but here's the recipe:

    Cowboy Cookies
    Ingredients:
    - 1 cup oat flour, made from ground oat groats, sprouted and dehydrated if desired. [Make sure to get really raw oat groats! Most on the market are steamed, The $$ difference isn't dramatic, it's worth it].
    - 1/2 cup cashew flour, made from ground cashews, soaked and dehydrated if desired.
    - 1/4 cup dried shredded coconut
    - 2 tablespoons melted cacao butter, measure after melting
    - 1 tablespoon coconut oil
    - 2 tablespoons yacon syrup, or date paste/syrup made from blended soaked dates, or agave nectar flavored with yacon powder
    - 1 tablespoon agave
    - 1/4 of a vanilla bean, seeds only or 1/2 tsp. extract
    - 1/4 cup raw chocolate chips or chunks
    - 1/4 cup chopped pecans, or other nut of choice
    - 1/8 tsp. ground cinnamon
    - pinch of salt

    Chocolate Chips: [that's my recipe, I think the original has different proportions and whatnot]
    This chocolate is so delicious and melt-in-your-mouth, you won't be able to stop after the first bite! Since it uses coconut oil instead of cacao butter, it needs to be kept in the fridge or freezer. This recipe makes great chocolate chips to use in raw cookies!

    Ingredients
    - 1/3 cup cacao powder, sifted
    - 1/3 cup melted coconut oil (about 3 ounces)
    - 1/8 t. Celtic sea salt
    - 2 T agave nectar

    Directions
    - Sift the cacao powder into a bowl, and set aside.
    - Mix the coconut oil, salt, and agave nectar with a fork.
    - Freeze or refrigerate, and cut into squared chocolate chips, if desired.

    Cookies Directions:
    1. Combine oat flour, cashew flour, coconut, cinnamon, and salt in a bowl.

    2. Add melted oils, yacon, agave, and vanilla, and mix well.

    3. Stir in chocolate and nuts. I reserve a little of each to press into top of cookies after shaping.

    4. Shape into cookies, top with reserved nuts and chocolate if desired and chill. Make 12 cookies.

    Thanks for the replies :) I just blended some dates, pecan, nuts, raisins and shredded coconut. I rolled it into balls and it's (hopefully) setting in the fridge right now. I tasted some of the mixture and it was so yummy :)
    Sirova that recipe looks really good - i'll have to try it soon.

    Oh - that reminds me of Ani Phyo's Donut Holes. What you just made reminded me of hers.

    Default Oatmeal Raisin Cookies

    These are DELICIOUS! I give them to SAD people all the time and they don't even know they're raw!

    Oatmeal Raisin Cookies from Ani Phyo

    1 Cup Raw Oats
    1 Teaspoon Ground Cinnamon
    1/2 Cup firmly packed Medjool Dates
    1/2 Cup Raisins

    Process Oats and Cinnamon. Add Dates slowly to mix well. Add Raisins and pulse to mix.

    Shape into cookies and refrigerate.

    I know this is a late addition to the thread, but hoping it will be read again..I have a hankering for cookies...
    Oatmeal Raisin Cookies from Ani Phyo

    1/2 Cup firmly packed Medjool Dates
    1/2 Cup Raisins
    When the recipe calls for raw oates, is that oat groats? do they have to be sprouted and dehydrated or could I grind them up as they are?

    Better yet, I have some of Goraw's simple granola= sprouted and dehydrated oatgroates and flaxseeds, could I use that instead? I really want cookies now as supposed to when the sprouting and such is done..

    raw oats does not need to be oat groats.

    you don't need to sprout oatmeal for it to be used/good for you to eat.

    if you were to sprout it, use oat groats.

    you can totally substitute what you'd like and I'm sure most recipes would still taste delicious..

    I have an addition to the list infact....

    Not Peanut Butter Cookies (but they sure do TASTE like them)

    Yield: 8 cookies, 4 servings

    ½ cup raw almond or cashew butter
    ¼ cup pure maple syrup, agave nectar or raw honey
    ½ tsp. vanilla extract
    dash salt
    ½ cup ground almonds

    Place the almond butter, maple syrup, vanilla & salt in a food processor fitted with the S blade and process until smooth. Transfer to a small bowl and freeze for 30 minutes. Form into 1 inch balls and flatten slightly. Roll each cookie in the ground almonds. Freeze for at least 2 hours before serving. Stored in a sealed container in the freezer, Not Peanut Butter Cookies will keep for up to one month.



    I altered this a bit, and put a dab of raw rasberry jam in the centre of each...

    reminded me of the old SAD days where I'd eat pb&J's everyday (EVERYDAY)

    wow, thanks for this recipe..sounds so good.

    I ended up using the granola, which was buckwheat, not oates..ooops..but it turned out great anyway, delish actually.
