just a quicky re Almond milk
after reading a recipe one of you guys put up to make almond milk, I thought I'd give it a go cos I do miss soy milk and hadn't found a good substitute that I liked, so I made it and I love it, but my question is, since you have to do the whole nut soaking thing Id Like to make a lot of it at once, but I have no idea how long it keeps in the fridge, also my little boy is allergic to dairy and has been having soy milk, although now after all Ive read I find that its not as good as I once thought, is the almond milk suitable for 4 year olds? thanks

I had mine go bad a couple times, pretty sour, but I know it was fresh for at least a week.

solar livng.... well if it keeps for at least a week that's plenty, I was thinking of doing a weeks worth at once, with both my son and I using it it won't have much chance to go bad,
Doe.......... soaking and freezing the nuts is a brilliant idea, that way I will always be able to make it instantly... thanks heaps

You can make any kind of nut or seed milk, just to let you know, you can mix and match them to make then fantastically wonderful.
But, my favorite is almond milk, I use 1 cup (soaked) almonds with 2 to 4 cups water, depending on what I want it for, and then I add a dash of salt, and some dates and vanilla and it is sooooo good, you can make a wonderful nutmilk shake out of it, by freezing some, and mixing with the fresh, and adding cinnamone, nutmeg, cardamom, and some more dates, yummy, you can make a fruit milk shake with some frozen fruits such as banana and the almond milk, or frozen peaches is excellent too as is orange segments, just let your imagination soar, and you and your little one will be soooo happy.
I drink some almost every day. YUMMMY.
Cashews soaked, and smushed up makes an excellent cream cheese, for celery sticks or as a base for a dip. Kids love this too.

For me, the almond milk keeps for around 3-4 days.
I make muesli with the almond pulp that is left after making the milk - have you tried it? Just put some pulp in a bowl, add some mashed banana, shredded coconut, raisins, seeds, nuts if you wish, a little agave nectar and mix it all up. You can eat it as it is, or add some almond milk to it. You and your little one will love it for breakfast or a snack. You can also make cereal bars out of the mixture, and dehydrate them...

Raw Priestess, ...I added the dates etc and it really was lovely, better than anything you could buy ready made, I fed it to my 4 year old and he loved it, as for freezing it, Ive put it in ice cube trays so I can l make shakes when ever the mood takes, and my son thinks its a big treat, between that and Doe's Idea for freezing the soaked nuts I don't think we will ever have a problem except for the fact that almonds seem to be the most expensive nut here in the U.k. that and macadamias,

I tried the pulp and thought it was pretty bland ( no surprise since I have drained all the yummy stuff out) but I added a little agave and some unsulphured dried apricots and made little ball things that I put in the dryer,they tasted great, he liked that to, I,ll give the cereal ago next,
Im quite excited to try all these new ideas, now how to get hubby interested is my next project,(but I'm not holding my breath) right now he says he'd rather eat his own hair, although I made a raw pudding on the weekend and he didn't even know, so I didn't tell him:)

That's great you made the little balls and your son liked them. I made muesli with almond pulp today. The pulp is nice with mashed banana, coconut flakes and agave - my daughter and son love it. Mmmmm. I also made strawberry milk today with my almond milk - that was nice...
Whereabouts are you in the UK? I'm in Scotland.

Angelic light, Im in Norfolk, do you find much in the way of raw stuff for sale up there in scotland, its pretty rare where I am down here, sometimes when you ask about it, even in a healthfood shop, they look at you like youve got your head on backwards! as for using the pulp, since we are going to be making the almond milk regularly from now on I will try all the differnt ways I can find to use the pulp cos I hate wasting stuff.

I can get fruit, veg, nuts, seeds, some grains, legumes, spirulina, seaweed etc ok in the shops here, but I have to get everything else off the internet, mostly from Shazzie at Rawcreation, Kate Woods at Raw Living, or from The Fresh Network. I usually get things like the superfoods, agave nectar, yacon syrup and nama shoyu online.

Angelic light............... I do basicly the same, the local market has a good range of organic fruits and veg and even the supermarkets are starting to get organic stuff, but anything else like raw nut butters etc I get online, have you ever come across jimaca? I used to get it back in Australia (although it wasnt common) but ive never seen it once here in the U.K. Id like to try it in the raw chip recipe.

I've never seen jicama here in the UK. I just use sweet potatoes to make chips usually.

Does anyone sell almond milk in the stores? If so, which stores? Wholefoods?

curleedst................ I had never seen it anywhere(here in the U.K.) then today I was in one of the chain healthfood shops and there it was Almond milk, so I guess if it can be bought here then in the states it must be available, but it was mega expencive.

the almond milk in boxes i think is cooked (pasteurized) -- only it's raw if in glass jars, part of a special raw section which i've only seen in california!
but i use the box almond milk sometimes anyway.
a good quick almond milk is take raw almond butter and blend it with water, sweetener too if you want (like dates)

I found jicama in an asian store when I lived in Dundee, scotland. I haven't found it in Milton Keynes yet though... I really miss it, it's so nice and crunchy :)
