    Question Eggplant bacon recipe?

    Is it in Alissa's book cuz' I can't find it. Help! It looks so good and I want some!

    Eggplant as a bacon -Got the recipe from Top Raw Men
    I love it I love it and it does make a great ELT on onion bread with you cream dressing. Nothing like it. Your hubby knows how to give a great gift!
    You can mariante it in anything that you like and then dehydrate.

    1 large eggplant, thinly sliced lengthwise
    3/4 c. oil * I only used 1/4 cup oil
    1 tsp. cayenne
    2 Tbl. honey
    4 Tbl. Ume Plum Vinegar

    Marinate for 2 hours. Place on teflex sheets and dehydrate for 9 hours. Turn bacon over and dehydrate another 9 hours. (didn't take me that long)

    It's very good! I can't wait for it to be totally done. I've been sampling it along the way.
    My kids love it, even my dd and so that is a huge hit in this house!

    I made ETL wraps for everyone tonight....we all loved it!!

    This was our table just before we sat down to eat, dh and I also had tomato soup (YUM) and I made limeade to drink!

    Okay, I've looked high and low all over town and can't find plum vinegar. I'm talking, I climbed mountains and swam rivers to find the stuff. Put adds in the all the papers from here to Texas and still...nuttin.

    Well, not quite but ya know what I mean?

    Is there something I can substitute?

    You can use apple cider vinegar! Ume plum vinegar isnt raw. If you dont care about that factor, balsamic works great too.

    I tried this recipe this week and it's very tasty.
    I think that next time I will peel the eggplant before dehydrating because the purple skin gets very tough. Great recipe!

    You can buy it various places online: EDEN UME PLUM VINEGAR, according to the Japanese supplier, pickles in a traditional manner which renders the vinegar raw. I emailed about this in February of this year and Eden confirmed this; I suppose one has to take their word for it.
