For a smoothie, I'd blend the fruit (apple, banana, peach, strawberries) with some romaine, ginger & water. Is the coconut a young Thai coconut? If so, I'd drain the water, scrape out the meat and take the water in a to go cup to drink and bag up the coconut meat along with the dates for a snack. In another container, I'd put tomatoes, cucumber chunks and pine nuts for another snack. But that last one is what my tastes are leading me to these days. You may want a different combination. This one just seems light but hydrating.

By the way, ditch your green bell peppers; since they're unripe, they're not so great to eat. (If left on the plant, they turn to red bell peppers.)

Best of luck in the race - have fun!

I have a suggestion, be careful of consuming anything you're not use to. You wouldn't want discomfort while you're racing. So mix familiar foods.

I would encourage a fruit smoothie (banana and other fruit) before the race. Honey during the race for instant energy. I'm not a huge veggie juicer so I won't comment on that. (but carrot juice is great for energy)

    Good luck

Wow! That is fast. I remember being thrilled running a 9 minute mile. Now my runs are more like 10 minutes.

    Congratulations.

WOW that is a fast 1 mile. I am running my first 5K on October 1st and am looking for ways to maintain my energy. I LOVE smoothies so if anyone has any additional recipes please share. I love bananas and strawberries.
