Oh my heavens!!!!!!!! This looks amazing. I would do this in a HEARTBEAT if it were in Florida or another warm locale (normally I'm not into the beach; I'm much more of a "mountain" girl, but I'm healing from cancer and am looking to spend a week in a sunny area in the next couple of months)
but darn... this looks so tempting!! Hmmmmmm........

Julia! Hello lovely... you deserve to be somewhere warm and cozy. There is another retreat I have in mind that is not yet announced, which would fit the bill. I don't want to announce them at the same time and wind up competing with myself! :) But it will be in February if you are interested. ;)
Spicyfull - You are such a sweetheart. Thanks for your support as usual!

I nearly fainted when I read this! It sounds AMAZING! Oh how I wish that I could attend! I'm sure it's going to be fantastic. My very best wishes to all that attend (and a good share of envy! ) ...please come and tell us all about it afterwards! I can't wait to live vicariously through each of you!
-
Eva, like I posted on FB, this sounds sooo amazing. I so wish I could attend. Just don't break my heart and tell me that you're not ever going to do another one in NC and I'll be fine! I mentioned it to my husband today, and he's on board for a future raw getaway.
And Maggie Valley is just right down the road, so this location is PERFECT for me!
Taking it one day at a time. :D

Mary Kay! Thanks for telling me you posted this! How sweet you are. I think we all learned from each other - you were quite the hoot to have join us. You were like a little hurricane that came through without leaving any harm. LOL.
And Ms. Julia - lovely, good to know. Working on the details still, it is going to be FABULOUS and very different from the NC vacation. They will both serve different purposes... I think for someone who is living anywhere cold that needs to know how to handle it well, the NC thing is fabulous b/c of all the different things we're doing... but the warm one will be quite the relaxation. Can't wait to give you all the details! ;)

Oh Mary Kay! Thank you so much! Now that's what I'm talking about! Just reading your post made me smile from ear to ear! Your experience sounds absolutely divine!!!!!

Hmmm, I didn't understand your last post. does that mean you're cancelling the trip or that you just don't want to have to deal with filling the spaces.
Sounds like you're okay though.

Eva and all,
I'm a happy "customer" as I went on her last retreat at the same place in NC last month.
It was absolute HELL for me to get there. I'm a very busy mom with an apple- farmer husband and were in our peek season, keep chickens, homeschool kids, maintain a large garden....etc etc, and had to work extra hard to prepare so I could leave. Got very little sleep prior to going there. Drove 600 miles each way.....Even got a migraine (for half a day after arriving, due to the preparation stress ---went away by noon, thanks in part to the wonderful "mothering"/juices by Eva)......And I was only able to stay for the weekend. Was it worth it?
Yep.
And I'm also not new to raw. Have invented many of my own recipes etc, yet Eva, I still learned some valuable tidbits from you like :
a less expensive way to make your own vanilla
make your own date paste to be readily available for recipes
the use of Irish Moss
the use of lecithin
and believe it or not, the value of using fresh herbs (Thanks. Thanks a lot, Eva, now you've created more work for me in the garden, as I now realize, I'm going to have to grow more.....)
It was also nice to get away without having to pack a ton of food, and bring juicers and appliances, like I have in the past; hang around with other likeminded raw foodies and talk "shop," and learn about other people's lives.
I recommend it for anyone who can get away.
The skiing addition to this next vacay sounds great. Wish I could come again, but can't.
Yours truly,
Mary Kay Simoni, Ohio
p.s. Thanks for naming your stuffing "1200-Mile Stuffing" after me! It truly was worth the 1200 mile drive just for the stuffing alone!!!
