Thread: Soaking greens

    Lightbulb Soaking greens

    I read on an article that a kind of green vegetable which has some poisonous substances in it, can be edible and beneficial by cooking or soaking in water over night.
    So I was wondering if anybody has ever tried soaking greens like kale, collards or, ... Maybe soaking can reduce the bitterness of kale greens.

    First of all, there are various kinds of kale. I've only found one to be bitter. If you want to find out if soaking reduces the bitterness, do it and let us know.

    Second, soaking, to me, means you're also drawing out the nutrients in the greens. I'd go with what I heard to be the best solution ~ rotate your greens.

    soaking will plump up your greens thereby making any bitterness diluted a bit but if your greens need soaking to hydrate them, then the nutritional value is going to be less than if they were freshly picked.

    Solution.......Drink the Soaking Water, then Nothing is Lost.
