    Thanks!!!! I'm so glad you enjoyed the photos!!! I think if you make the dish LOOK pretty, it adds to the flavor somehow...

    I remember what Alissa said when I was there... She asked her Chef Leah (at Grezzo) to make her something to eat, and Leah had to make it look pretty. I TOTALLY understood why!!!! It's like ART! And, it's SO much fun!!!!

    BTW, My kids (ages 11 and 7) want to join me on this Challenge!!!! YEA!!!!!! I'm incredibly excited about that!!!!!!! It's gonna help a LOT not having to cook for them during the day!!! But, it means that I'm gonna have to be more prepared than ever to make sure that they have enough to eat. They LOVE the Smoothies and most of the meals...especially the Nori Rolls, Collard Rolls, Eggplant Pizza (with the Marinara Sauce instead of the nuts), and things like that. My Son is allergic to most NUTS (except Almonds), so I'll just use mostly seeds for him.

    Last night, I started out by making the Cream for the Bananas, Berries, & Cream (For my SON I will alter it by making Alissa's sauce from the Crepes to pour over the Bananas & Berries), and I made the Eggplant Parmesean--which I'll have today for dinner (I have Maranara Sauce left over from this, so I'll use that and Spiral some noodles for my SON'S dinner--adding some Avacado to it...). I also got plenty of fruit and things to make Smoothies and Salads. Gotta go find my camera to download the photos...

    I am SOOO Excited about this!!! Looking forward to many more changes this month!!! I have some NEW Challenges to contend with this month...keeping my kids interested being one of them... But, I'm up for it! Doing the last 30 days has prepared me to continue more focused than ever!!! My best friends are joining me this month and it's such a priviledge to help them!!!

    EXERCIZE: A couple of weeks ago, I twisted my ankle, so I can't do running on a treadmill, but I can do a slow walk, work with weights, work with my band, or do an exercise tape, so I'll do some of that today.
    Renee, you mention the Nori Rolls that your children love. I tried making some rolls yesterday with raw tahinni and avocado and fresh spinach but the Nori rolls were so overpowering both my 9 y/o daughter and myself could not tolerate the taste. These are raw Nori Rolls. Is there a way to tame the pungent taste of these? I love the idea of using them but need help with their taste. Any expert suggestions? Thanks!

    Hi Tklausner!!! Yes, my kids STILL LOVE the Nori Rolls!!! As a matter of fact, they HAVE been known to eat just the Nori by itself!!! When I do the rolls for them here's what I do: Take the Nori, lay it flat. On it, put a Romaine Lettuce Leaf and fill the Leaf with: Shreaded Zucchini, Shreaded Carrots, Avacado, Mint or Cilantro, Red Bell Peppers, and Sprouts. Roll it up and let them dip it in Nama Shoyu. My kids LOVE it that way. Another thing I'll do is the roll just like Alissa does it, with the exception of the Califlower. My kids don't care for it, so I use Jicama in place of it and they like that.

    Hmmmm... I need to try using the Jicama alternative, too! I LOVE making raw nori rolls but seem to have digestive issues with cauliflower.

    Default I Met Renee' Today!

    I was shopping at my local Whole Foods when I heard someone doing a demo about raw foods. I was so excited! I told my husband, "Listen - raw foods are finally getting mainstream!" We finished our shopping and I heard the presenter mention that she does live food classes, coaching, catering and boxes. You mean she makes raw food for people?? I have to get to her card! I walked over to the table to introduce myself and was shocked and delighted to meet our very own Renee'. She was even more sparkly, bubbly, and beautiful in person and her food looked super fabulous. I think she was a little surprised that I recognized her as a celebrity :-) Made my day!

    I feel super lucky to live close enough to her to be part of the raw food community she is growing!

    Hi Allison!

    Thanks for resurrecting my Thread!!! :) Here's the Eggplant Bacon Recipe that I use. I got it right here on this site.....just did a "search"...

    Bacon

    1 large Chinese eggplant peeled and thinly sliced lengthwise. (wide veggie-peelers work)
    Marinate in a mixture of:
    3 Tablespoons olive oil
    1 teaspoon black pepper
    2 Tablespoons maple syrup
    3 Tablespoons Ume Plum vinegar
    2 Tablespoons Apple cider vinegar
    2 Tablespoons cider
    1 Tablespoon liquid smoke
    Marinade for 2 or more hours. . . I like 6 or so. Spread them out on the teflex and dehydrate for 8 hours and then turn the "bacon" and dry another 8 hours.




    Here's for the Snicker Bites... I actually keep mine in the Freezer and they keep VERY well!!!

    They are from MiahTay:

    Frozen "Snicker" Bites

    Frozen Pitted dates (pick ones with the easiest to fill holes)

    Chocolate Filling
    · ½ cup almond or other nut butter (I used walnut butter)
    · ¼ cup cacao powder
    · ¼ cup agave or honey
    · ½ tsp. vanilla
    · dash of sea salt

    Combine all filling ingredients in bowl, mix until smooth.

    Take chocolate filling and pipe into your frozen dates using a pastry bag or something comparable. Freeze.

    Hey everyone!!!

    I'm trying some of Alissa's recipes I haven't tried in a while. So, here's Alissa's Easy Crust Pizza! It's TOTALLY to LIVE for!!!! She made it when I was in class and I have been wanting to make it again! When I made this a a year or so ago, I didn't enjoy it. But.....NOW....!!!! OH MY!!! It's da BOMB!!!! It REALLY is!!! My palate is cleaned so much more now and I can totally appreciate it! The same thing happened with her Calzone for me. I had to be RAW for a while to really appreciate it. Anyway, here it is:






    I will try the other crusts soon also. But, this one (with the Flax) is GREAT!!!
