I can't make any bacon until I finish all the recipes in Alissa's book, so could someone try this experiment:
Make some slices with a mandoline and some with a peeler and let us know the result. Which is thinner?
Annie - who will be missing that bacon. Gotta hurry up and finish Alissa's recipes!

Hey Annie!
Page 2 of THIS THREAD shows the thick slices of the Eggplant Bacon in my Dehydrator. I used a Mandolin for those. Also, see page 4 and page 6...there are several pictures of mine there. Page 12 shows Alissa's Bacon from GREZZO sliced with a veggie peeler. I made mine her way and it's SOOO GOOD!!! Actually, it's great both ways, but I got more slices her way...but, it was gone just as fast!!!! LOL!!!
Hers turned out a lot thicker than mine and was WAAAY Stronger in flavor. But, I use the recipe here on RFT from Cherie (RAWkinlocs) that uses Ume Plum Vinegar. Both are FABULOUS!!!

Can you make some with a veggie peeler and some with a Mandolin sliced thicker and tell us what you think is better? I like 'um both!!! But, I don't like the seed parts!!!

Haha funny you asked. I sliced some with a veggie peeler and it didnt go so well so I sliced some thicker...soooooo I just happen to have both.
They are in the hottub soaking and when they holler "UNCLE!" I will let em out and into the sauna. Keep you posted!

When you sliced them thicker did you use a knife?

Hi you all....yes I used a knife. I made a video today on the results and I am having trouble posting it...I am getting tech help in a half hour n will hopefully get it up for you...wooohoooo

In the past, I usually used a Mandolin. I made some tonight and I used a Veggie Peeler and went all around the Eggplant like they do at Grezzo. I think I like mine better that way...plus you get more! But, I don't like the seed parts...but I didn't like that part with the Mandolin either...

I made a funny vid about this eggplant topic. I cant get it to load. Anyway I liked the thicker better. I was sooo yummy. The thin was crispy like with not much taste but the thick was super! You would love the vid. oh well.

I have some in my "D" right now. I have always used a veggie peeler and it turns out really good. Love this stuff to munch on, or sprinkle on salads, or a UBLT (un-bacun, lettuce, tomato samwich)...

ummmmmmmmm yuummmmmm I have eggplant bacon made, spicy cheeze blocks, and then I will get some tomatoes and i want to make a burger...I will today!! oooo la la. Gotta go make a new video for my tv show....wooohoooo

Sorry for replying so late...got my foot X-Rayed today...sprain still hurts!!! Then, had a death in family!!! (my 94 yr old Aunt). So, been pretty busy...
I did make Cornbleet's Walnut Pate for my Mom today. She noticed I am losing more weight, which made me feel good... :)
As for peeling the Eggplant well, when you peel the Eggplant all the way around, just keep peeling the insides the same way until u get to the center seeds. I don't like that part, so I toss um...
