Ecopolitan in Minneapolis-- a MUST see!

Anyone in the Minneapolis, MN area looking for fabulous food needs to check out Ecopolitan on Lyndale Ave. The restaurant has a really cozy, artsy ambiance and the wait staff is so helpful. I had an amazing dinner of zucchini spaghetti noodles on a bed of balsamic-dressed spinach, topped with a marinara of sun-dried tomatoes, olives, walnuts and fresh herbs--and to top it all off, a handful of fresh strawberry slices! Soooo delicious!! My mouth is watering just thinking about it! One of my friends had a beautiful raw-violi of root veggie noodles, cashew cheez and ginger dressing on mixed greens. The other friend had a raw lasagna-- a mountain of layered fresh vegetables and nut cheez with a side of spicy kimchi. We had to set some of our meal aside (to enjoy at home) so we could share a decadent slice of raw french silk pie, topped with a light cream and fresh berries. I

It was a meal I will not forget! If I were not moving to New York soon I would return every day trying each mouth-watering raw item on the menu!

I LOVE Ecopolitan!!!!

I went last year for the first time - when I went to Minneapolis for some yoga training.....I made sure it was on my list when I went this year too. I've had their tostadas, walnut/mushroom burger, pizza & some wonderful desserts with my friend - we adore them!
