Creamy Broccoli Soup?
I'd love to make a creamy broccoli soup, but am not experienced enough with raw uncooking to give it a go on my own. Anyone have a recipe for this - or something similar that I could adapt?

Well, the two recipes found here: http://www.rawguru.com/html/recipes.html#css are for cream of spinach and cream of cauliflower soup...but I don't see why either couldn't/wouldn't work for broccoli by just substituting!

Thanks for the link! I'm going to just substitute broccoli for cauliflower and it should work just fine. Cool beans :)

Hi quetta,
I was wondering how your creamy soup turned out...
I just made the soup myself, but I used the cauliflower, and I didn't like it...
I just put all the things in a food processor (don't have a high speed blender) and it didn't get creamy at all... maybe I did something wrong, but I just got watery mixed cauliflower and pinenuts...
Hope your soup was better than mine!

Joke - I haven't tried it yet. I plan on making it tonight or tomorrow night. I think I'll try adding some tahini to see if that helps with the creamy-ness. Sorry yours didn't turn out! I'll keep you posted on mine ...

I tried making broccoli soup. Hmm ... I made what looks like a mint shake and what tastes like a broccoli smoothie! I used 2 cups of broccoli, an entire cup of cashews (less didn't make it creamy enough), 2 T lemon juice, 2 T tahini, 2 cups water and some ginger and paprika. It tastes okay - but it's probably not something I'll attempt again.

Hi qetta,
it sounds like your soup turned out better than mine anyways
I used pinenuts (maybe not enough) and i just got white looking water with a rice-like cauliflower and pinenuts... not really what you'd want, right?
anyways, it has been an experiment for me, not one that I'll make again, but at least now I know...
thanks for your post!

make mine from the book...its unbelievable!!! i always add more cumin and salt but this is THE best!
Broccoli Soup
So creamy and satisfyingÂ…one of my favorite soups! The cumin and sea salt are very important in this recipe, so make sure you have added enough of both of these to bring out the flavor of this soup.
3 cups water
1 cup almonds
1 teaspoon honey
2 cups broccoli
1 avocado
1/2 to 1 clove garlic
1 Tablespoon olive oil
1 teaspoon onion
1 teaspoon sea salt
1/8 teaspoon cumin
1/8 teaspoon black pepper
1. In a blender or Vita-Mix blend water, almonds and honey until smooth.
2. Add in the rest of the ingredients and blend until creamy.
Note: Add more sea salt if this tastes bland.

Thanks Alissa! I just noticed your recipe for broccoli soup in your book yesterday. I still have my soup and will try saving it by adding an avocado and some cumin.
