buckwheat sprouts and calories
I have read that 1 cup of buckwheat is equal to about 580 calories, but I am curious about the amount of calories in sprouted and dehydrated buckwheat. For one thing, during sprouting, so much of the starch is soaked out and rinsed away that i would imagine it must lose some calories. it is also so light and fluffy and so much less dense. With the tails that have grown on them, it seems they take up slightly more space in a cup than the tightly packed unsprouted ones. So if anyone happens to have an idea of the amount of calories, or an opinion on whether you think its losing calories Id love to know! I eat it because its so packed with energy, but am worried that after sprouting/dehydrating I am not getting as much as I would have otherwise. thanks!

WHEN A SEED SPROUTS
- Stored food & enzymes needed for growth of the mature plant are mobilized.
Protein, carbohydrate & fat is broken down (pre-digested) to free amino acids, simple sugars & soluble compounds.
Vitamins, including A, B-complex (B-12), C, E & K, increase to meet the growth needs of a young plant. (For example, B-complex in wheat increases 600 percent, vitamin E triples & vitamin C increases six-fold. Vitamin C in a 100 gram serving of peas goes from 0 to 69 mg. in 48 hours!)
Essential minerals - calcium, magnesium, iron & zinc are supplied in organic form, "chelated" for better assimilation.
Nutrient-density is enhanced at the expense of calories!

I was coming here to ask the same question, so thank you ;)
I bought some Buckwheat, and was so excited to try some of the recipes, but I wanted to look up the calorie info since I keep track of my calories most of the time. WOW, I couldn't believe one cup had almost 600 calories!!
I have not fixed the Buckwheat as of yet for that reason. I can fit in A LOT of veggies and fruits for 600 calories, or I could have a really nice piece of RAW dessert.
I still want to try the recipes that call for this, but I guess I will have to be careful with what I eat the rest of the day.
Let me know if you find out any more info.

That's one thing I LOVE about RAW..........there are NO calories to count, that is not unless you only eat Oils and don't exercise. But eating the basic RAW meals, what's a calorie?

Buckwheat sprouts not that high in calories
1 cup of cooked buckwheat has about 155 calories. If you take 1 cup of raw buckwheat and cook it you get about 2 cups. If you take 1 cup of raw buckwheat and soak it you also get about 2 cups. So, at the most, soaked buckwheat is probably no more than 155 calories; possibly less as some of the the starch is washed away. Buckwheat is loaded with nutrients, very filling and low in both fat and fructose, two things which can cause problems for raw foodists. It is also easy to digest and very few people have allergies to buckwheat so they are a great addition to a raw food diet.
Quinoa and grains can be hard to digest.
Winter squashes and yams are about the only other foods that can be eaten raw, are vegan and are not too high in either fat or fructose.
