I have read that 1 cup of buckwheat is equal to about 580 calories, but I am curious about the amount of calories in sprouted and dehydrated buckwheat. For one thing, during sprouting, so much of the starch is soaked out and rinsed away that i would imagine it must lose some calories. it is also so light and fluffy and so much less dense. With the tails that have grown on them, it seems they take up slightly more space in a cup than the tightly packed unsprouted ones. So if anyone happens to have an idea of the amount of calories, or an opinion on whether you think its losing calories Id love to know! I eat it because its so packed with energy, but am worried that after sprouting/dehydrating I am not getting as much as I would have otherwise. thanks!
