Default Alissa--? on the corn tortillas

Wow these are good! I added fresh jalapeno to them. When they were warm they tasted too sweet, I thought I probably used too much orange juice, but now that they are cooled off, they're perfect. I'm curious about the frozen corn. I used frozen corn (raw) and they're great...what difference does using frozen make? And I'm curious how you stumbled onto that. I assume you made them first with unfrozen corn and didn't like them, what made you think to try frozen corn? Does freezing the corn keep it chunkier when it's processed?

    Hi smasty,
I really donÂ’t have the answers for you
All i knows that yes, i made them with fresh corn and they were ok but didnÂ’t have the same flavor and for some reason, (i donÂ’t remember because it was a long time ago) i used the frozen corn, (maybe i had some and froze it so it wouldnÂ’t go bad thinking i would use it at another time) and it was really much better. They seemed to have this kind of weird after taste with the fresh.
So, that is my very unscientific reason for doing that!
The jalapeño sounds good! I put cayenne in them sometimes for spice also.
    Best,

I spead it out thin on a teflex sheet then cut it into squares after it was done. I suppose I have about 1.5 teflex sheets worth. I still think they came out just a little too sweet. The corn was pretty sweet and I used a lot of it. I probably used too much orange juice (didn't measure). I might try lime juice next time. The fresh jalapeno made them really spicy, but good!

    Default Raw Frozen Corn?

What kind of frozen corn do you buy? I know that most frozen veggies (like peas) are lightly steamed before the companies bag and freeze them - at least that's what the companies told me. I love the convenience of using frozen veggies and would love to be able to use them.

In this VERY old thread, Alissa is saying that she froze her own.
