    Default Sore Throat + Collard Greens

    Does anyone know why I immediately get an extremely sore throat from eating collard greens? It doesn't go away either, it stays, for most of 24 hours. Spinach does it a bit too, but not as severe.

    Just being a nosy neighbor, putting my 2 cents in.

    I really don't have a clue why that is happening to you, but if it happened to me, I'd avoid eating it. You never know, it may be some weird allergic reaction to the collards.

    Sorry to hear it, though. Collards are pretty good vitamin/mineral wise. Well, there's always alternatives, right?

    How are you eating them? Marinated or straight up? They contain oxalates (simple explantion as salt crystals) and if these get too concentrated in body fluids - they can crystallized and can cause some pain in your throat.
