Default Cheesy Salt & Vinegar sweet potato chips

I had tried the Salt and Vinegar chip recipe in Alissa's book but didn't like it with regular potatoes as the recipe called for, so I decided to try my own version with sweet potatoes (it's sort of a blend of her cheesy chips and the salt and vinegar ones):
1 Large sweet potato (or 2 medium ones)
    1 cup apple cider vinegar
1-2 T Braggs or organic soy sauce
    1/2 T salt

Slice sweet potato into ultra thin slices using a mandoline or food processor with ultra thin slicing disc. Mix remaining ingredients in a bowl to dissolve salt. Marinate sliced potato in liquid for 10 minutes. Put slices on dehydrator mesh and dehydrate until crisp. Save remaining liquid to repeat recipe with more potatoes.

I've only tasted them fresh so far and they're great, I can't wait for them to be done.

I'm wondering how thin is ultra thin? I used a mandoline, and some came out papery, and the others were more substantial. Not strong enough to hold a dip, but not paper thin. If I estimated I would say about 1/16 to 1/8 of an inch.

Since I got a whole bag of organic yams (3 lbs) at Trader Joe's last week for $3, I'm not afraid of them not being perfect.

The ultra thin slicing blade on my food processor does 1mm slices, not sure how much that is in the americain system (I'm in Canada).

My raw chip is made out of jicama; I'm real happy with those. I'll have to try your recipe though.

I actually LOVE Alissa's salt/vinegar chips with potatoes. mmmmmm!! I also really love her cheezy chips, though, I do like to sprinkle mine with cayenne.

Okay, so I am really only (well, not only but, I have nothing new to add other than to agree with with other people have said...you know) posting in here so I can look back at this thread and remind myself to TRY these! :) Is there a way to subscribe to a thread that you haven't posted in or replied to?

I made them. they were a bit unusual, quite edible, but not cravable like I would categorize the kale chips.

I don't have many "before" pics as I really hated weighing 130 lbs (I was 175 before raw and quite muscular). I don't have many "after" pics either as my body fat is a bit higher than I'd like (I have a digital scale that estimates body fat and it went up 2-3%, it doesn't help that I'm "only" 75% raw) but I have been slowing down on my workouts a bit but seeing my fat % go up on my scale (although I hadn't noticed physically, but I don't have visible abs, but this is rather normal during a bulking phase which I'm in) made me realize I need to step up my workouts. I'm also cleaning up my 25% of cooked food to "healthier" cooked foods. I'll try getting closer to 100% raw too.

Once I'm at 175 then I'll start thinking about cutting off some fat, but for now I still want to gain weight. Once my weight is higher and body fat is lower I'll post after pics.
