All this Young Thai Coconut meat...??
I've posted about this before ~ but what do all of you do with the young Thai coconut meat?
We use 1-2 coconuts daily for green smoothies and I've got SO MUCH meat in the freezer.
Right now I'm thawing out the more mature meat to make some coconut shreds (from a Matt & Angela video) may try some with curry and some with cumin.
I would really appreciate it if you post a recipe, or point me to it, or however your favorite way to use up all this coocnut! I'd really appreciate 'recipes'. Thanks in advance. *Ü*

Are you saying you only use the water in the smoothies, but freeze the meat?
I always use the water and meat in my smoothies.
I also throw the water and meat in a blender, then juice a couple of bags of romaine lettuce. The green juice then goes into the blender along with the Thai coconut water and meat. The results are a light green-colored liquid drink that makes it much easier to drink green juice.

Hi Steve - Yes, that's what we do in the green smoothies - we use the water and not the meat. Occasionally, if the meat is very young I'll add it in - but if it's more mature I don't.
I admit to having a mental block against using the meat, I'm being honest. I guess I feel it's so much fat? Will raise my cholesterol? I don't know, I just "don't use it" and there it site in my freezer (to use at a later date - ha! ... so what's the diff? )
Lately the meat has been really mature - I have to use a table knife to pry it out.
Your romaine juice & coconut mix sounds really good. I think I make things too complicated a lot of the time! Thanks for your reply! *Ü*

I've never worried about the fat content from raw products - and have never read that we need to be.
I've been meaning to post photos of this, since this is one of my original concoctions - and I may be the only person who does this.
Pour green juice into blender with Thai coconut water and meat.

Note the drink looks really green at first (before blending)

The white meat really lightens up the green color after blending for a few seconds.

Finally, this is REALLY good. The water and meat really masks the taste of the green juice. The photos above were two pre-washed bags of romaine lettuce - but you could use any green juice.

Lately the meat has been really mature - I have to use a table knife to pry it out.
After trying several different utensils myself, I found a standard chisel was the easiest for slipping behind the meat.

After opening at least a hundred, I think everyone gets it down to a fine art.

hi i have used the meat 4 various puddings cocoa mousse , pecan pie,savoury parcels lots of uses our problem is sourcing them in scotland very difficult to get
have fun making new things

The squirrels get it. So cute watching them dig into the coconuts. Like you, 1-2 a day..

i add them smoothies... but otherwise sadly most get tossed if no one wants to eat them. with both my hubby and i fasting right now we are going through 4-8 coconuts per day.

Bugger the fat content, it keeps you looking beautiful!
Make some custard, or a mousse, or ice cream (heaps of ice cream recipes call for it), use it for creamy salad dressings, or make sweet fruit roll ups, or savoury samosa wraps, or.. the list is endless!
I wish, oh I wish I had your problem!
The meat and water of my young thai coconuts never even gets into the blender to be honest!

Heck...they don't even sell young thai coconuts here...just the old brown ones.

I love the coconut water in my smoothies, and I put some of the coconut meat in there too, but sometimes I have some meat left over. What to do with it??
Anymore recipes would be wonderful!

Steve ~ That is one beautiful green juice! I love the pictures. And the chisel? Okay - gotta get one of those. The more mature coconuts' (young Thai) meat can be really hard to get out!

Wow Aleesha ~ 4-8 coconuts per day (Heaven!!). I remember Dan McDonald (the liferegenerator on YouTube) saying that he's able to take his coconut meat to a local restaurant and swap it with them for wheatgrass juice!
Seria ~ Would you be able to post the recipe for the pecan pie? Was it really yum?
I know klomasius - whaaa, what a problem I have! ;) lol But honestly - I heard information (Paul Nison perhaps? I shouldn't even mention names because I don't remember) say that based on blood work results in the past, his cholesterol was a bit high and it was attributed to too much coconut meat and durian. I guess it just "got stuck" in my brain.
And it's just not something I'm really drawn to. If it's very gelatinous, I will put it in my smoothie - but so much lately has been more mature than that.
Thank you all for your suggestions. I don't make a lot of sweets, but I bet for our monthly potlucks it would go over very well!
And WestVirginiaRaw - do you have any Asian markets in your area? That's where I get my coconuts. There's only 1 grocery store that sells them and they are almost twice the price of the Asian markets.
Pop Tart ~ I made 5 trays chock full of the coconut chips today, just to use some of the coconut up. (link above in my first post). I made some with spirulina, chili powder, cumin and curry. I've got my fingers crossed! *Ü*

If you are worried about cholesterol, go get a test!
Don't worry about it if it isn't a problem. Remember that people's ability to convert fats into cholesterol and store it can be completely different.
My cholesterol is fine and I eat lots of coconuts. It's really a quantity thing too, if you are worried, just dont eat these things too much!

Your advice is right on klomasius! I did get a test just 2 months ago and my numbers are great. It's just stuck in my brain and wow, I need to pry it loose!!

Two recipes that need lots of coconut meat:
I Am Devoted Live Coconut Cream Pie in the book "I Am Grateful" on page 132.
Coconut Kream Pie With Carob Fudge On Brownie Crust in the book "Ani's Raw Food Kitchen" on page 217.
Also, what about a coconut sorbet? I would think it would be as easy as coconut meat, agave (or sweetener of choice) and a little coconut water to get things moving in the blender and then freeze.
