What do i do with Eggplant
I bought an eggplant at the market yesterday as they looked so nice, but then i realised i have no idea if you can eat them Raw or how to prepare them.
Any ideas??

i marinate them and dehydrate them or cut inot inch slices and put on a tom sauce and cheese and dry a bit for mini pizzas are really yum,...guacamole is good too on top of the tom sauce.

Bacon, Why Not
1 large eggplant, thinly sliced lengthwise
3/4 c. oil
1 tsp. cayenne
2 Tbl. honey
4 Tbl. Ume Plum Vinegar
Marinate for 2 hours. Place on teflex sheets and dehydrate for 9 hours. Turn bacon over and dehydrate another 9 hours.

Here is a recipe I have tried. It was really good and very filling.
EGGPLANT & AVOCADO SALAD (serves 4)
• 1 Large Eggplant
• 2 or 3 Ripe-But-Firm Ripe Avocados
• 2 garlic cloves, chopped finely
• 1/2 Red Onion, chopped finely
• Juice of 3 Lemons
• 4 Tbsp. Extra Virgin Olive Oil
• Dulse Flakes and Pepper to Taste
• 2 Tsp. Raw Honey
1. Pare and dice eggplant. Place in a deep bowl and immediately cover with cold water acidulated with juice of 1 lemon.
2. Whisk together: oil, garlic, dulse flakes, pepper and juice of 1 lemon. Set aside.
3. Peel and dice avocados. Place in bowl and toss immediately with juice of 1 lemon.
4. Drain eggplant and combine with avocados. Add chopped onion.
5. Whisk dressing again and add to mixture. Toss gently.
6. Set aside for about 15 minutes. Chill if desired.
7. Before serving, toss gently again and sprinkle with honey.

I copied this from another site to try in the future... can't remember what site though...
"Slice up an eggplant thinly into rounds. Sprinkle with sea salt. Dehydrate at 105 degrees until they can be bent over without cracking. In the meantime, whip up a couple of zucchinis, some white onion, cumin, chili pepper, sea salt or miso and about a half cup of soaked walnuts.
Now. When the eggplants have softened, stuff them with the mixture, and fold them over. Continue to dehydrate for about 12 hours- seriously, you won't know what hit you. "

Between the time I was born and the time I turned raw (42 years) I had a sum total of ONE BITE of eggplant! Now I eat 2 whole ones a week! Dehydrated eggplant is amazing!!! I'm trying eggplant pizza today.
