Default Sprouting: Are they done yet?

How do you know when your sprouts are done.. sprouting?

I've got a few lentils I've been sprouting and I'm not sure if their "done" yet. Now my Mother was a sprouter but this is my first time. (To be honest I hated my Moms sprouts, they were REALLY spicy. So I thought I'd try something blander.) The lentils have sprouted and the tips of their little stems/roots (? lol) are green. It looks like some are trying to make leaves while others are unsprouted.

What do I do now? Are they done and do I through them all onto a salad? Or do I let them finish ALL sprouting and until I see little leaves? Do I leave the unsprouted lentils in when I serve them or pick them out?

Any help would be appreciated. ;)

    Thanks very much in advance!

(On a side note since my interest in raw foods began the hubby and I have been doing our best, in our budget, to lean towards a rawer or at least more veggie filled diet.. along the way we've been inspiring friends to go take a look into the raw food diet as well. ALOT more people have shown interest than I thought they would. Neat huh?)

    I nearly forgot to mention..
I never got my flax to sprout. I had to eventually give up on them and throw them out.

I think that your lentils are ready. I have read that in the case of beans and lentils they are ready when the tail is as long as the bean. You can not worry about the ones that are not sprouted as you will never get 100%.
I do not think that you will get flax to sprout. You just need to soak it to activate it.
