What's in my fridge. . .Organizing tips!
HELLO!
It's funny I eat soooo simply during the summer, ya know fresh fruit and salads. I honestly do not touch my dehydrator during the summer months and any nuts I eat "neat" meaning no pates, cheeses etc.
So obviously it's not summer any longer and I just wanted to share with you what's in my fridge. I do a menu at the beginning of every month of recipes I would like to do. Sometime I get to all of them in a month sometime in two weeks! I have also been known to hardly touch the menu at all!
What was really interesting about shoping for theis menu was that it did not cost that much at all . This was because I am at that point when I have so many of the ingredients already in my panrty. Had I tried to do this at the beginning of my raw journey I would have been bankrupt!
So the pictures are of what I currently have in my fridge/freezer and a pic of my current menu.
Fridge First Shelf:
Alissa's Pad Thai sauce (Living on Live Food)
Mixed berry sauce for cheesecake
Cream of tomato soup (Raw Food Made Easy)

This is not everything but its what I have that has been "prepared".

Aw shucks, thanks! I have provided the resorces from where I aquired the recipes in the mail post but if there are any you especially would like just email me.

So are you saying that you make up cracker dough and pie crust dough ahead of time and just refridgerate them until you are ready to dehydrate the crackers or make a pie? If so, how long does that last in the fridge?

Yes, I keep several crusts/crumbles on hand. THEY LAST FOREVER. I even like to take a crumble and dehydrate it for a few days. Then I store it just in the pantry. They are good also stored in the freezer.
I have never been fond of the typical soft raw crust so the crusts I use I dehydrate until crisp! :)
I love the crusts by Renee Loux Underkoffler in her book Living Cuisine.
Such As:
Almond-Vanilla Crumble Crust
Heavenly Hazelnut Shell
Pecan Graham Cracker Crust
Walnut Crumb Crust
Buckwheat Crumble Crust
Good Oat Crust
You can also form pie crusts in a pie plate put in a layer of wax paper and do it again repeating until you have lots of pre formed crusts just waiting for you in the freezer!
With cracker dough the shelf life is much shorter but what I do is "bake" off a tray or two at a time so I can be using the other trays as I only have a 4 tray Excalibur (I am waiting for Alissas stainless dehydrator to come out early next year). What happens with the dough is it will ferment so if you see bubbles it has gone off. I would say it will last you a good week.
The pate's and cheese last a LONG time for me. I also cover the tops with wax paper to keep as much air as possible out and that helps.

Organizing it all!
HELLO!
I get a lot of email asking how I organise it all and the biggest plus is that I have a very well stocked kitchen. I'm not referring to the big guns like the ViaMix and the Excaibur but to the food.
PLEASE PLEASE dont feel you have to have your kitchen this way to be raw. I have built this (raw kitchen) up over the past THREE years.
I just wanted to pass on a handfull of thing that have really helped make day to day prep easier.

1. My drinks list: This is an at a glance list of all the raw drinks I can make. It is a sesonal list; this one posted is from summer. each one is also marked with a cookbook & page number code.
2. Raw Cupboard: I keep my Raw books here as well as pantry items that I keep in smaller quantities. Also my Raw Box & Binders - I'll go into this later.
3. Bottles: These are what I store smoothies and drinks in. Oddly I have found the Nalgene keep smoothies fresher than in glass which I tried first.
4. Pantry: As you can see I store my bulk dry Items in these great glass jars. I also have the same jars in double that size for crackers. I LOVE these jars!
5. Paper Bag Veg Storage: I think is my best discovery. I have tried everything to extend veggie shelf life; discs, green bags etc. and non of these worked to my satisfation.
What I have found is that a double or triple layer of those paper bags you get in the veg section keep the veg really fresh in the fridge! It has to be a min of two layers. After you use the bags just put them out of the way to dry out and then you can use them again & again.
I want to add that I have removed both veg drawers from the fridge as this affored me lots more room for my veggie paper bags. I also stand the bags up in the door where the mayo & tomato sauce used to be.!

More!
1. Parsley/Cilantro Storage: With some fresh herbs I cut a bit off the bottom and stick in a glass of water. This REALLY keeps them fresh. Keep topping it up as they get thirsty!
2. Smoothies Container: This is THE BEST for on the go smoothie drinking. It's by Rubbermaid. It has a great easy to hold shape, wide but not too wide drink spout and a lid that doesnt leak when dropped!
3. Spice Cupboard: This is for all the bits and pieces. Agave, Spices, Cocoa butter, hemp, maca etc.
4. Spinach Storage: Spinach goes slimy quickly - I really dislike slimy spinach!!! So I took a spinach container and cut large holes all over in cluding top and bottom. I then lined it with double papper towels, enough to hang over both sides. I then devide the spinach with additional layers in between. The paper towels can be left out to dry when all done and resue again. Water and moisture are not spinach friend! My spinach never goes off using this method! (Costco)
5. Fruit Bin: Easy for kids to reach in. I line each with either paper bags or paper towels. Wish I had those $$$ wooden veg storage boxes from Williams Sonoma!
