You can make coconut icecream cup cake. I use the soft baking mold, freeze it and then you can put them in cup cake paper. I use a large thermal with ice pack from whole food. I have done this before for my daughter's school and children loved it. Nut free and coconut aren't that expensive.
Just blend the coconut meat in your blender, add coconut water enought to blend or be thick like a sauce, add sweetner that you like, vanilla. You can add cacao if you want chocolate, or frozen strawberry if you want a different flavor.
Add little plastic spoon and voila
You can make macaron with shredded coconut (No nuts), you can find plenty of receipe on the web.
