    Default what to do with coconut meat?

    I finally opened up my first coconut and I have the meat from inside of it scooped out.. what can I do with it?

    I thought about some sort of dessert maybe? I have almonds and some peaches and plums.. some frozen fruit and strawberries in my fridge right now..

    any suggestions? it doesn't HAVE to be a dessert either..

    just tell me what to do with coconut meat! :)

    I love to make coconut creme pie with the meat. Just blend the meat, some bananas, a bit of water and some dates. YUM. I might add sliced peaches and put on an almond crust.... O.k. now my mouth is watering....

    ooh, good post!

    I just opened up my first coconut a few days ago, but didn't know what to do with the meat other than eat it straight. It didn't quite live up to my expectations that way

    Anyways, I've got another coconut in the fridge and would love some ideas, too. It's a mature coconut, not a young one. I haven't found any organic young coconuts yet. They do exist, don't they?

    Mine never last long enough for "recipes". I usually eat as I'm scooping. You must have tremendous self control.

    My husband's favorite smoothie...

    young coconut - water and meat
    raw chocolate
    agave and/or a little stevia to taste
    GREENS

    I also like to just make a plain coconut smoothie sometimes with just the coconut meat and water and ice - very refreshing!

    i second the young coconut-cacao-agave(or dates) to make a chocolate pudding... chill in the fridge and it becomes like mousse/pudding! i add a tiny bit of himalayan salt and a spoon of coconut butter, a bit of vanilla.. or if you have fresh chocolate mint and/or ginger -- mmmmm!

    (leslie bega's recipe uses :1 Cup of Coconut Water, 2 1/2 Cups of Baby Coconut Meat, 1/3 Cup
    Mint Leaves, 1/2 Cup Raw Chocolate Beans, 1/2 Cup Fresh Dates, 1/2 of a Vanilla Bean, 1 Thumb Size Ginger Root, 1 tsp. of Coconut Butter, 1 to 2 tsp. Almond Butter, 1/3 Cup Agave Syrup)

    my personal fav is blending the meat and some of the water with raspberries -sweeten to taste...i'm sure it'd be fab with peaches or cherries or strawberries or all of the above

    if you are thinking savoury, the meat makes great noodles for asian dishes, stirfry type things, think like a spicy "peanut" sauce (with almond butter)... raw food real world has a great recipe, i think it's on greenchefs...

    i love love love making a big fruit salad out of whatever fruit you like and grate a boatload of fresh coconut into it. grab a spoon, mix it up and get to work.

    Its pretty good just like that but, failing a tste for it. Everything goes good in smoothies.

    There is a link on www.goneraw.com for 'butter' made with coconut oil and coconut meat blended up with flax seed oil.

    Rub some Nama Shoyu on pieces of coconut meat, and put it in the dehydrator overnight. The next day you will have some 'beef' jerky!

    You can make a milk that is so much better tasting then SAD milk that it isn't even close. Use the water and pulp from a young coconut and blend smooth. YUMMIE

    I take the thicker coconut meat, and slice it into noodles, then mix up a thai sauce made of garam masala, almond butter (or tahini), a little agave, some nama shoyu, and lime juice. Then, I chop up scallions and cilantro, and toss it all together. SO GOOD.
