Caramel Sauce for your "ice cream" and other stuff...
Hey all,
I made more of that delicious butter pecan "ice cream" yesterday and this time (prior to blending up the "ice cream") I made a caramel sauce. I didn't use any honey in the ice cream as my bananas were very ripe and sweet and didn't need anything added. BUT, I had a taste for caramel and so I blended some dates with water (little at a time until desired consistency) in the processor with vanilla (maybe like 1/4-1/2 tsp.) and a dash or two of sea salt. Soaked dates probably would worked out even better as they would have been softer and blended better, but I got it to work by just increasing the water as needed until it was nice and smooth. If you're daring, add some almond milk (as caramel DOES have milk in it!) and see what you come up with! Haven't tried it, but I imagine it would make it SUPER yummy and possibly creamier!
Boy oh BOY when I mixed it in with that pecan ice cream...it was SOOOO good!
Try it! I have more of the sauce in the fridge for next time.
Another thing I did this weekend with "caramel"
I did the same caramel sauce and set it aside. Then, I blended up some apples (like for making fruit leather). I stirred the two mixtures together and dehydrated and what I ended up with was a "candy" sort of treat that tastes like caramel apples! You can also dehydrate the caramel sauce alone and have "caramel leather". It's really good.
I also tried Alissa's Chick-Un patties and they are good! I was skeptical, but they turned out good. They form a kinda of "crust" that is almost like breaded. I had to substitute a couple of things like sprouted chickpeas instead of lentils as I had none and poultry seasoning and other spices instead of the Herbamere seasoning, but they still turned out good.
I had to make her mayo FOR the recipe, but had a lot left over and it tastes very much like the dairy version! I made buns (not Alissa's, another recipe) and today had a very delicious sandwich with the patty, lettuce, the mayo on the bun. Even my husband liked it! Couldn't get the kids to even try it so, their loss!
So, if you have Alissa's book, try the chick-UN patties.

By the way, I've been making up the ice cream every night. It is incredible. I've experimented, though, and added ground-up cacao nibs & carob. Oh oh oh oh oh (think Meg Ryan in Harry Met Sally). Now I can't wait for tonight (when my overwhelming ice cream urge hits) to try the caramel sauce. I'm off to slice up some more bananas and toss them in the freezer.

Jeeeeez gurl! Caramel? Bo will NOT be living with me once I get into carmel!!! heh! He did like the ice cream a LOT. Problem is, we are getting organic bananas and they are always green ~ and gone as soon as they are ripe sooooo... not getting into the freezer at all!

Hi all,
I wish to goodness I could remember where I got this recipe from. I know it was on a website...maybe someone here will recognize it and let us know because I always like to give proper credit to the author/chef.
Onion Sesame Burger Buns (makes about 6 buns) - I halved this recipe
3 c. kamut, hardwheat, rye or mixture of grains (I used softwheat, spelt and buckwheat because it was sprouted and dehydrated and I just let it soak overnight to rehydrate)
3 TBS. of agave or other sweetener
1 1/2 c. sesame seeds
1/2 c. dried minced onions (I used fresh onions)
1 tsp. sea salt
1. Soak grains for 8 to 12 hours.
2. Drain and rinse. Allow to sprout with jar on it's side in dark cupboard for 8 hours.
3. Rinse and drain after 8 hours and sprout for 8 more hours. (of follow whatever method of sprouting you currently use)
4. Divide all ingredients, including grains, in half and make recipe in 2 batches for best results.
5. Put 1/2 of the grains along with 1/2 of the sweetener in processor w/ "S" blade. Process until grains are broken, but not overprocessed. Should resemble sticky cooked rice, not mush.
6. Add 1/2 of the sesame seeds, 1/2 of the onions and 1/2 of the salt and pulse chop to mix. Remove to a bowl and repeat with the other half of the ingredients.
7. Form 6 buns and sprinkle with sesame seeds
8. Dehydrate at 120 degrees for 2 hours
9. Turn over onto mesh screen and sprinkle with seeds and reduce heat to 105 degrees and dehydrate for 6 more hours.
Now, these buns turned out "okay". Not something that made me do backflips, but WITH a nut patty or some other patty or with some "fixins" it's palattable. They're dense, like Ezekiel bread is dense. But with the chickUN patties, the lettuce and mayo, it did the trick and was satisfying. As I told my husband, it was like the more I ate it, the more I liked it and he agreed.
I think I will try and make buns with the onion bread recipe, maybe making the "dough" thicker some how. It's an easier recipe and less involved than the above recipe.
